Cardamom Rose Chocolate-Dipped Strawberries Bouquet
Some traditions in our home don’t need a big announcement. They just quietly show up every year and these Cardamom Rose Chocolate-Dipped Strawberries are one of them. This year, I gave them an Indian twist, folding a whisper of ground cardamom and rose essence into the melted chocolate and arranging the strawberries into a beautiful bouquet.
The idea comes from my cardamom-rose flourless chocolate cake, where I first fell in love with this pairing. Floral and warm, just slightly unexpected, it feels familiar yet gently modern.
I started making these for my husband and daughter years ago, and now it’s just understood that Valentine’s Day comes with chocolate dipped strawberries infused with cardamom and rose. It’s simple, it’s thoughtful, and it feels like us.
Here’s How I Make Cardamom-Rose Chocolate-Dipped Strawberries
I start with one pound of fresh strawberries, washed and dried completely since any moisture can cause melted chocolate to seize. Once dry, I insert grilling bamboo sticks through the leafy base, pushing the pointed end into the center so each strawberry sits securely for dipping.
To make the chocolate coating, I melt one cup of dark chocolate chips in a glass measuring cup, microwaving in 30-second intervals and stirring until smooth and fluid. I stir in one quarter teaspoon ground cardamom and half a teaspoon rose essence, infusing the dark chocolate with warmth and a subtle floral note that elevates classic chocolate-dipped strawberries.
Holding the stick, I dip each strawberry into the cardamom-rose chocolate, turning gently to coat and letting the excess drip off. While still wet, I finish with heart-shaped sprinkles or nonpareils and set the sticks in a tall glass for the chocolate to set.
In my cooler kitchen, the chocolate sets within a couple of minutes but you can pop them in the refrigerator to cool faster. Once firm, I arrange the strawberries upright in a vase to create an edible strawberry bouquet that feels romantic, personal, and gently modern.
