Clean eating has been trendy since early 2000s and I first came across the term over a decade ago through social media. The concept gained further traction through blogs, books, magazines, diet programs, and celebrities, all advocating for a return to whole, unprocessed foods to improve overall wellness. Over the last two decades, it has evolved into other related concepts such as whole foods, plant-based diets, the real food movement, and nutrient-dense eating, all emphasizing minimally processed, nutritious foods. These trends continue to promote the fundamental principles of clean eating for optimal health and well-being, emphasizing making better food choices whenever possible, mindful eating practices, and sustainable food choices without strict dietary rules.
That said, here’s how I define clean eating for myself – avoiding heavily processed foods, opting for natural sugars and healthy fats whenever possible, controlling portions for every meal, and savoring every bite without any distractions or rushing through my meals. I crafted this definition and adopted a clean eating lifestyle over ten years ago.
Clean Eating Avocado Veggie Sandwich
As part of my commitment to clean eating, I created a nutrient-packed sandwich featuring various superfoods that not only provides excellent nutrition but also tastes amazing! I continue to prepare it for lunch every week or two, still relishing it with the same enthusiasm and excitement as when I first made it over ten years ago!
This sandwich is made of only the good stuff – avocado, with its healthy fats, tomatoes with lycopene and antioxidants, radishes that add a wonderful crunchy texture and are a natural cleansing agent for the digestive system and finally, the key ingredient – sprouts (alfalafa, clover, etc) that contain high concentrations of vitamins and minerals. You can layer any other veggies that you might have on hand – sliced cucumbers, red onions, carrots, colorful bell peppers or jalapeños for a delicious kick! You can also sub the sprouts for baby spinach or other mixed greens, if you prefer.
This wholesome sandwich is best made with sourdough bread, preferably homemade (if you have time!) or whole grain/whole wheat from a local bakery that bakes fresh without any additives or preservatives. These breads are rich in fiber and provide satisfying carbs without the empty calories of white bread often found in grocery stores. You can choose to toast the bread if it’s not fresh.
Mash the avocado directly on one slice using a fork until smooth, seasoning it with salt, pepper, or spices like ground cumin, coriander, or cayenne pepper to taste. For added freshness, sprinkle minced herbs such as cilantro, parsley, chives, or green onions. If avocados aren’t available, you can substitute with hummus (opt for a clean, minimal-ingredient variety or make your own) or simply smash cooked chickpeas or other beans.
