Cooking Class Menu

Some examples of Indian food that I teach in my classes regularly. You can choose upto 4 dishes from the list below to create your own menu for a class or I can work with you to design a custom menu:

Small Bites/Appetizers

Sundried Tomato & Paneer Pinwheels – Sweet, delicately spiced filling of Sundried Tomatoes, Indian Paneer and Spinach stuffed in puff pastry rolled and cut into pinwheels
Peas and Potato Samosas -a triangular savory pastry stuffed with spiced mashed potatoes and peas and deep fried to golden perfection
Masala Idlis – Spiced steamed rice cakes
Baingan Bharta & Goat Cheese Bruschetta – Toasted Baguette slices topped with Baingan Bharta and Goat Cheese
Chicken Kheema Rolls – Wonton wrappers stuffed with Chicken Kheema and baked until crispy and golden
Sev Potato Dahi in Phyllo Cups – Minty potatoes with spiced yogurt and sweet‘n’sour tamarind sauce in Phyllo Cups
Cucumber & Feta Raita Dip – Cool yogurt dip with crunchy cucumber, salty Feta cheese and a hint of dill.

Beverages

Cardamom Scented Mango Lassi – Buttermilk mixed with mango puree and a hint of spice with ground cardamom
Salty Lassi/ Chhaas – a classic Indian drink made with buttermilk, black salt and roasted ground cumin
Mattha/ Herbed Buttermilk – a classic Indian drink made with buttermilk with mild spices and fresh herbs
Masala Chai – Spiced Indian milk tea made by boiling the tea leaves with milk, sugar, ginger and special tea masala

Sprouted Moong Bean Salad with Chaat Masala Vinaigrette – Sprouted Moong Bean with diced Cucumber, Cherry/Grape Tomatoes, sliced Red Radishes and shredded Carrots tossed with Mixed Greens and Chaat Masala Vinaigrette
Cabbage & Fennel Salad with Cumin scented Oil dressing

Baingan Bharta – Spiced Stir Fry of mashed Roasted Eggplant
Fried Cauliflower with fresh Ginger – Indian-style cauliflower spicy stir-fry with peas and fresh ginger grated in just before serving
Chicken Tawa Masala – Indian-style chicken stir-fry with onions and peppers in a spicy onion and tomato sauce


Roasted Vegetables

Aloo Gobi with Fresh Ginger – Spiced baby potatoes and cauliflower roasted in the oven, finished with fresh crushed ginger
Bhindi Masala – Spiced okra roasted in the oven, finished with fresh cilantro
Aloo Methi – Spiced baby potatoes roasted in the oven, finished with fresh fenugreek leaves and a splash of lemon juice


Daal Stews

Green Masala Lentils – Lentil Stew with Cilantro-Coconut Masala Paste
Contemporary Yellow Daal – Moong Daal with wilted Baby Spinach, topped with hot seasoned oil
Daal Fry – Stew of 5 different daals/pulses stir fried with tomato, onions and spices

Saag Paneer – Indian Cottage Cheese in mildly spiced Creamed Spinach
Chana Masala – Chickpeas in spiced Onion-Tomato Sauce

Lamb Rogan Josh – a classic Kashmiri, mildly spiced stew of leg of lamb chunks


Fish & Seafood Mains

Masala Fish Packets – Fish fillet spiced with garam masala, fresh ginger, garlic and lemon in aluminium foil or parchment paper pouches
Malvani Shrimp Curry – Shrimp cooked in a spicy sweet and sour onion-coconut curry
Fish Hirva Masala – Fish in fresh Green Coconut Curry


Rice

Jeera Rice with Fresh Herbs – Cumin & Herb- scented Basmati Rice
Peas Pulav – Mildly spiced rice pilaf with peas


Breads

Tawa Rotis and Parathas – we will make a big batch of whole wheat flour dough and then I will teach two different ways of rolling it out to make a variety of grilled Indian flatbreads.


Desserts

Bread ka Mittha – Indian-style stove-top, eggless bread pudding with nuts and spices
Phirni – Indian-style stove-top rice and milk pudding with nuts and spices
Kheer – Indian-style stove-top vermicelli noodles and milk pudding with nuts and spices
Sheera/Sooji Halwa – Cardamom-Saffron Semolina Pudding with Almonds
Shrikhand/Amrakhand – Saffron/Mango flavored whipped Yogurt
