Mexican Bhel is a unique fusion dish made with 100% Mexican ingredients! It’s an idea to serve chips and salsas similar to the Indian Bhel, a savory snack and popular street food dish made with puffed rice, onions, tomatoes, spices, and topped with fresh cilantro and sweet-and-sour tamarind chutney.
We often get Mexican takeout for weeknight dinners, and there are always leftover sides like tortilla chips, salsa, pico de gallo, sour cream, black beans, and more. These sides aren’t necessarily enough for a single person as a full meal. So, I try to make the best of the leftover odds and ends by turning them into a quick and delicious snack or a perfect appetizer to go with Margaritas!
Here’s how to make it:
1. Crush tortilla chips in a bowl.
2. Toss in the pico de gallo, black beans, diced avocado, sliced jalapeños (optional) and salsa.
3. Spoon into individual bowls.
4. Drizzle sour cream and sprinkle fresh chopped cilantro before serving.
