With just a handful of basic ingredients from the refrigerator and pantry and minimal prep work, I whip up this delicious and nutritious concoction that’s sure to fill my belly and nourish my soul!

My 15-minute Vegetable Clear Soup

My recipe is uncomplicated and straightforward, packed with an array of colorful vegetables that are typically found in my kitchen, such as carrots, onions, cabbage, and mushrooms. Of course, you can use whatever veggies you have on hand – celery, bell peppers, broccoli, green beans, etc. You can also enhance the protein content by adding ground chicken to the mix if you have it available. I chop the vegetables and cook them to an al dente texture in a savory, clear broth infused with a simple blend of salt, pepper, chilies, and garlic. For the broth, I prefer using chicken stock for its richer flavor and higher protein/lower carb content, although vegetable stock or broth can be used for a vegan version.

To elevate the flavor profile even further, I love to finish it off with chopped cilantro and then double down on the chili-garlic flavor and drizzle some chili-garlic oil on top before serving. It adds an extra kick that perfectly complements the hearty and wholesome goodness of the soup. You can also squeeze in some lemon juice and turn it into a delicious Indian Lemon Coriander Soup!

15-Minute Vegetable Clear Soup

A super quick and easy recipe for Indian restaurant-style clear soup with chopped vegetables in a chili-garlic flavored broth.


  • 1 tbsp neutral oil
  • 23 garlic cloves, smashed, peeled and minced
  • 12 green chilies, thinly sliced, as needed
  • 1/4 medium onion, finely chopped
  • salt, to taste
  • black pepper, to taste
  • 1 qt (4 cups/946 ml) stock/water (see Notes)
  • 45 sprigs of cilantro/coriander, leaves and tender parts of stem, minced (see Notes)

Vegetables (see Notes and also Variations)

  • 1 small carrot, finely chopped
  • 1/8 head of cabbage, finely chopped
  • 56 button mushrooms, finely chopped

Topping (optional)


  • Heat oil in a pot or a saucepan over medium heat. Once the oil starts shimmering, add in the minced garlic and sliced green chilies, and sauté for a minute, till they are fragrant (see Variations).
  • Add in all the chopped vegetables. Give it a quick stir and then season with salt and pepper. Stir to combine and continue sautéing for another minute or two.
  • Pour in the stock and give it a quick stir. Bring the soup to a boil over medium heat.
  • Once the soup comes to a rolling boil, in about 5 minutes, turn the heat off (see Variations). 
  • Stir in the minced cilantro/coriander leaves and give it a good stir.
  • Spoon it into soup bowls and top with chili-garlic oil.

Boost the protein content with chicken stock!

Use vegetable broth for keeping the soup vegan or substitute with chicken stock for protein boost and rich flavor.

Can I use any vegetables in this recipe?

Yes, you can use whatever veggies you have sitting in your refrigerator – carrots, cabbage, green onions, broccoli, spinach, mushrooms, haricot verts or green beans, peas, etc. Just chop them up so that they are of same size and cook evenly.

Cilantro tastes like soap?

If cilantro/coriander tastes like soap to you, it can be skipped or substituted with parsley or sliced green onions.

Recipe Variations

Stir in 1/4 – 1/3 lb of ground chicken or any other ground meat of your choice before adding in the chopped vegetables. Sauté the meat till it turns light brown, 3-4 minutes and then add the chopped veggies. Follow the rest of the recipe as is.

Add small shrimp/prawns (50-70/lb size) for a low fat/high protein option, after you turn the heat off so they don’t over cook. They will cook literally in a minute!
