We all have those odds and ends sitting in the refrigerator—leftover takeout rice, a handful of veggies from another recipe, just waiting to be used. That’s exactly how this Baby Corn & Mushroom Fried Rice came together in a crave-worthy combo.

A cup of jasmine rice from a recent Thai takeout, a few straggling mushrooms, and some baby corn from my produce drawer, left after making my Baby Corn and Mushroom Pepper Masala, came together to create a surprisingly hearty and flavorful dish. Rather than letting them go to waste, I decided to throw them together into a pan and let the magic of stir-frying do its thing.

Crisp baby corn & umami-rich mushrooms create a bold, flavorful fried rice that comes together in the pan in just 15 minutes!


Ingredients

Units Scale
  • 2 tbsp neutral oil
  • 23 garlic cloves, minced
  • 12 Thai chilies, minced (substitute with 1/21 tsp red pepper flakes)
  • 1/2 medium onion, thinly sliced
  • salt, to taste
  • 45 white mushrooms, thinly sliced (see Variations)
  • 810 baby corn, cut in half, about 1 inch long
  • 12 eggs
  • 1/4 tsp fine ground or freshly cracked black pepper
  • 2 tbsp soy sauce (see Variations)
  • 1 cups of cooked rice (see FAQs & Notes + Variations)
  • 34 springs of cilantro, minced, for garnishing
  • 1 green onion, thinly sliced, for garnishing

Instructions

  • Heat oil over medium high heat in a sauté pan or a wok and let the garlic and green chilies sizzle for a minute.
  • Add in the onions and sprinkle some salt to help them soften.
  • Sauté on high heat for 2 minutes till the onions sweat and then add in the sliced mushrooms and baby corn.
  • Continue sautéing for another 2-3 minutes till they soften.
  • Make a well in the  center of the pan and crack the eggs.
  • Season with salt and pepper.
  • Using the cooking spoon, scramble the egg by breaking it up and stir-frying it for 1 minute.
  • Push the scrambled egg to the side and make a well in the center of the pan.
  • Add in the soy sauce.
  • Let it bubble up for a few seconds and then add in the rice.
  • Stir to combine everything well and fry on high heat, stirring continuously for 3-4 minutes.
  • Adjust seasonings if needed.
  • Turn the heat off.
  • Garnish with the cilantro and green onions and serve immediately.

Step: 1

Pro Tip for Rice

Cold, day-old rice works best for fried rice because the grains stay separate and don’t turn mushy.

You can use any white or brown rice (basmati or jasmine) or any other variety like red or forbidden rice as well.

Recipe Variations

You can play with the ingredients and add into to the mix extra vegetables like bell peppers or snap peas for added crunch and boost the protein with tofu, shrimp, sliced chicken, pork or beef.
