Baingan Bharta & Roasted Red Peppers Dip

Description

Spiced mashed roasted eggplant and red peppers create an Indian-style dip perfect for easy entertaining.


Ingredients

Scale
  • 1 large American eggplant
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, quartered
  • 2 cloves garlic, peeled and smashed
  • 1/2 inch piece ginger, peeled and roughly chopped
  • 2 tbsp neutral cooking oil
  • 1 tsp cumin seeds
  • 1/2 tsp asafetida (optional)
  • 1 tsp turmeric
  • 1 tsp red chili powder (optional, adjust for heat)
  • 1 tsp garam masala
  • Salt, to taste
  • 34 jarred roasted red or yellow peppers, thinly sliced
  • 34 cilantro sprigs, leaves and tender stems chopped, for garnishing
  • 23 naan, cut into wedges and toasted, for serving

Instructions

Roasting the Eggplant (see FAQs & Notes for red peppers)

  • Preheat oven to 450°F and line a baking sheet with foil.
  • Lightly coat the eggplant with oil and prick all over with a fork or knife.
  • Roast on the prepared sheet until soft inside and skin is browned, 45–60 minutes. Rotate and flip halfway through.
  • Cool slightly, peel the skin, scoop out the flesh, and mash until relatively smooth.

Making the Bharta

  • Heat oil in a sauté pan over medium-high heat.
  • Add cumin seeds, asafetida, turmeric, and onions. Sauté until light golden brown, 4–5 minutes.
  • In the meantime, purée tomatoes with garlic and ginger. Set aside.
  • Season the onions with salt, red chili powder, and garam masala. Stir for 30 seconds to let the spices bloom.
  • Then add the puréed tomato mixture to the pan. Cook for 5 minutes, stirring occasionally, till the oil separates out.  
  • Stir in the mashed eggplant. Adjust seasonings, if needed. 
  • Simmer uncovered for 5 minutes, to let the flavors develop.
  • Turn off heat and fold in sliced roasted red peppers.

Serving

  • Transfer to a serving bowl and garnish with minced cilantro.
  • Serve warm, at room temperature, or slightly chilled.
  • Perfect with toasted naan wedges. 

Recipe FAQ’s and Notes

Tip for red peppers

You can use jarred roasted peppers from the grocery store or online, or roast fresh red bell peppers alongside the eggplant. Lightly coat with oil, roast until skins char and peel easily, then slice before adding to the bharta.

Roasting the eggplant

You can also roast the eggplant in an air fryer for less time.

For extra smokiness, char the eggplant directly over a gas flame before roasting.

Add fresh herbs like parsley, green onion, or mint for a fresh twist.

Top the dip with crumbled goat cheese or feta for a tangy, creamy boost.
