For this recipe, I do not recommend using store-bought orange juice from a bottle or a carton. Instead you can get fresh Valencia or navel oranges and squeeze the juice right before making the vinaigrette.
You can also substitute with lemon juice. Try to use sweeter lemons like Meyer lemons for the recipe.
Where to find white balsamic vinegar?
White balsamic vinegar can be found in most grocery stores. Apple cider, champagne or white wine vinegars would be great substitutes, if you don’t have it.
I do not recommend using aged balsamic vinegar. It’s dark brown color will alter the golden color of the vinaigrette along with the taste as well.
Got coriander seeds?
You can lightly dry roast about 1 tsp of the seeds on a small pan over medium heat and crush them with knife or grind them in a mortar-pestle or spice grinder.
Red or golden or a combination!
You can use a combination or just red or golden beets for the salad.
Recipe Variations
Play with other spices like ground cumin in place of coriander! Cumin and orange pair well together and create a flavorful combination. Cumin’s earthy spice complements the bright, citrusy flavor of orange in this vinaigrette.
Make it a savory fruit salad by substituting beets with sliced strawberries!
