Recipe Variations
Substitute cooked red beets with cooked golden beets for a change.
Make Maharashtrian-style Potato Raita by substituting cooked beets with boiled potatoes! For a upvaas/fasting friendly version, skip the onion in the potato raita.
Finish off the with phodani or tadka. Heat 2 tbsp oil in a small frying or tadka pan. Add mustard and cumin seeds along with asafetida. When the seeds crackle and the asafetida froths, take it off the heat and pour the hot seasoned oil over the bowl with all the ingredients. Toss well to combine and garnish with cilantro/coriander leaves.
