The Unsung Hero

There’s something truly special about taking a humble vegetable and turning it into a stunning dish bursting with flavor. For me, ridge gourd, known as Dodaka in my mother tongue, Marathi, or Turai in Hindi, is one of those unsung heroes of the vegetable world. Its mild flavor and tough appearance may not steal the spotlight on their own, but when paired with the right spices, it transforms into something delicious. One of my go-to dishes with it is the Bharli Dodaki, a simple yet flavorful stuffed ridge gourd curry from the Maharashtrian cuisine.

Incredible Health Benefits

Ridge gourd, also known as angled luffa, Chinese okra, or Vietnamese gourd in other parts of the world, is one of those vegetables that often flies under the radar. Despite its incredible health benefits—it’s low in calories, high in fiber, rich in vitamins C and A, hydrating, packed with antioxidants, and supports heart and digestive health—its spongy texture and mild flavor can make it less popular at the dinner table. But for me, it was a regular part of our meals growing up. It was a staple in my mom’s kitchen, where she transformed it into comforting curries and hearty dals that I thoroughly enjoyed!

From my mom’s kitchen to mine

As a child, I didn’t think much of it—ridge gourd was just another vegetable my mom masterfully cooked. But as I’ve grown older and started cooking for my own family, I find myself gravitating toward it. It’s available in most Indian or Asian grocery stores worldwide and occasionally appears at my local farmers’ markets. Every now and then, they hop into my shopping basket, almost as if they’re tempting me to recreate the nostalgic dishes from my childhood.

One of my favorite ways to cook ridge gourd is to make a simple, flavorful curry. The star of this dish is the tender ridge gourd itself, braised in a spiced broth that’s infused with the warmth of kala/goda masala (a special Maharashtrian spice blend). But what really makes this curry special is the stuffing—crushed roasted peanuts, a touch of jaggery for sweetness, and a hit of red chili powder or cayenne pepper for spice. The result is a perfect balance of hot and sweet flavors that complement the gourd’s naturally mild taste.

Pure Comfort on a Plate

The contrast of textures and flavors is what truly makes this dish stand out. It does take a bit of time but the ridge gourd becomes soft and succulent as it absorbs the rich, spiced broth as it simmers away, while the crunchy, nutty stuffing adds another layer of excitement. Given that the stovetop recipe takes a good amount of time, you can use alternate cooking methods like a stovetop or electric pressure cooker. Served with hot rotis or steamed basmati rice, this humble curry is pure comfort on a plate. If you’re not familiar with ridge gourd, do give it a chance! Bharli Dodaki (Indian Stuffed Ridge Gourd Curry)

Description

Sweet and spicy, Maharashtrian-style vegan stuffed ridge gourd curry made with peanuts, jaggery and spices.


Ingredients

Units Scale
  • 2 medium-sized ridge gourds (Dodaka /Turai/ Chinese Okra) (see Variations)
  • 2 tbsp neutral cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/4 tsp asafetida
  • 2 cups of water
  • cilantro/coriander leaves, chopped, for garnishing (optional)

The Stuffing Mix (see Variations)

  • 1 tsp red chili powder (use less for milder flavor)
  • 2 tbsp Maharashtrian Goda/Kala Masala
  • 1/4 cup powdered/ground jaggery
  • 1/4 cup coarsely ground unsalted roasted peanut
  • salt, to taste

Instructions

  • Rinse the gourds thoroughly under cold tap water and dry it with a kitchen towel. Trim the ends with a knife and using a peeler, peel the tough ridges of the gourd.
  • Cut the peeled gourds into 2-inch long chunks and given each slits along the diameter, about half way in.
  • Combine all the ingredients for the stuffing mix in a medium bowl.
  • Stuff each chunk of gourd by opening the slit and filling it with the stuffing mix.
  • Heat oil over medium heat in a deep sauté pan or a saucepan with a lid. Add mustard and cumin seeds along with the turmeric and asafetida, followed by the stuffed gourds.
  • Add the water, give it a stir and cook covered for 15-20 minutes on medium heat, stirring occasionally.
  • Take the lid off and continue cooking uncovered over medium heat for 10-15 more minutes, till some of the moisture absorbs/ evaporates and the curry thickens.
  • Garnish with cilantro/coriander leaves, if you like and serve warm with hot unleavened Indian flatbreads like phulka rotis, chapatis or bhakris. 

Step-by-Step Details

Where to find ridge gourd?

Ridge gourd can be found in Asian grocery stores as Chinese okra or Vietnamese gourd or in Indian grocery stores as Dodaka/ Turai/ Turiya. You can also find it occasionally at farmers markets.

Recipe Variations

Can’t find the ridge gourd? Use baby eggplants or regular okra instead.

You can add 1/4 cup  of grated fresh or thawed frozen coconut to the stuffing mixture, if you’d like
