This recipe is close to my heart, handed down by my mom, who has a talent for transforming simple ingredients into extraordinary dishes. My sister, an avid bhendi lover, often inspired Mom to experiement with okra. Growing up I remember mom making all kinds of recipes: Bhendichi Bhaji, a simple stir fried with basic spices (which I make by roasting in the oven!), Dahi Bhendi (okra made in a tangy yogurt curry), Bhendi Masala (okra cut into thin strips and cooked in a onion-tomato masala) or Kala Masala Bhendi (stuffed with a mixture of kala/goda masala, peanut powder, jaggery and stir fried).

One of my all-time favorites is Bhendi Elaichi Masala. Mom stir-fries thin strips of okra, potatoes, tomatoes, and onions in phodani (oil seasoned with mustard, cumin, asafoetida, and turmeric). For the final touch, she sprinkles freshly crushed cardamom seeds, transforming the dish into something truly special. Give it a try! In my mother tongue, Marathi, “bhendi,” while in Hindi, it’s known as “bhindi.” Indians love this vegetable! It’s found in abundance almost year-round across the country. Bhendi Elaichi Masala (Cardamom-spiced Okra)

Description

A quick, flavorful Indian okra stir-fry spiced with cardamom. Pair with rotis or rice & dal for a wholesome meal.


Ingredients

  • 1/2 lb okra, cut into thin strips (see FAQs & Notes + Variations)
  • 1 medium red or yellow onion, thinly sliced
  • 2 medium red or white potatoes, cut into thin wedges
  • 1 medium tomato, thinly sliced
  • 2 tbsp neutral cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp turmeric
  • 1/4 tsp asafetida
  • salt, to taste
  • 1/2 tsp sugar
  • 1/2 tsp red chili powder (skip or use less for milder heat)
  • 45 green cardamom seeds, crushed (see FAQs & Notes)
  • 45 sprigs of fresh cilantro/coriander, chopped for garnishing

Instructions

  • Heat oil in a deep sauté pan.
  • Add mustard and cumin seeds along with the turmeric and asafetida.
  • When the seeds splutter and the spices froth, add all the vegetables.
  • Stir fry for a minute.
  • Season with salt, sugar and red chili powder (if using).
  • Cook covered for 10-15 mins on medium low heat, stirring occasionally, till all the vegetables are well cooked.
  • Add crushed cardamoms and give it a final toss.
  • Simmer uncovered for 5 more minutes on low heat.
  • Garnish with fresh cilantro/coriander and serve hot.

How to cut okra into thin strips?

Trim the ends and cut the okra into strips, by cutting along the length into half and then further cut those halves along their lengths into quarters.

Don't have cardamom seeds?

Substitute with ¼ tsp ground cardamom.

Don’t like okra? Try the recipe with green beans. They share a somewhat similar mild flavor and can be used; however, keep in mind that they will not replicate okra’s signature slimy texture exactly.
