Leftover Makeover

I’m always on the lookout for ways to make the most of what’s in my kitchen, especially when it comes to leftovers. I love how extras from one dish can be reimagined into something completely new and just as satisfying. That’s exactly what happened when I found myself with about a quarter cup of leftover spiced mashed potato filling. I had made it for veg pattice that I had baked for breakfast. It wasn’t enough to make more pastries, and I had run out of puff pastry anyway. So, I saved it, knowing I’d find a good use for it. Two days later, it became the star of a crispy, golden Bombay Toastie (Mumbai Masala Grilled Sandwich) with Paneer!

The Mumbai Classic

The Bombay Toastie, also known as Mumbai Masala Grilled Sandwich, is a street food icon. It’s simple yet packed with bold flavors, thanks to its spicy mashed potato (i.e. masala) filling, refreshing chutney, tangy chaat masala and crisp, buttery bread. One bite and I’m transported to the bustling streets of Mumbai, where vendors craft these sandwiches and serve them loaded with flavor.

Traditionally, it’s made with a spiced mashed potato filling a.k.a masala, similar to what you’d find inside samosas, batata vadas, or veg puffs. The filling is spread on white sandwich bread, layered with coriander-mint chutney, and sprinkled with chaat masala before being toasted to crisp perfection. Vendors get creative with the fillings, adding sliced onions, cooked beets, tomatoes, bell peppers or cucumbers. Some versions are loaded with shredded Amul cheese, while others get a final dredging in sev for an extra crunch. I love the sandwich’s versatility, but I have to admit, warm tomatoes and cucumbers aren’t my thing—I’ll take mine cold, thank you!

I sandwiched the filling between slices of whole-grain white bread slathered with chutney and toasted it in my stovetop toaster until golden and crispy.

My Secret Ingredient: Paneer

Paneer may not be traditional in a Bombay Sandwich, but it blends beautifully with the masala (spiced mashed potatoes), adding richness and making the sandwich more satisfying. Since the amount of leftover masala filling I had wasn’t quite enough, adding paneer not only stretched it but also gave the sandwich a protein boost, making it a more balanced meal.

Potatoes on their own don’t have much protein, so this simple addition made a big difference. If you want to keep it dairy-free, crumbled tofu works just as well, while shredded rotisserie chicken or crumbled boiled egg whites would be a couple other great ways to add protein.

Make It Your Own

The sandwich is endlessly adaptable and you can customize it to your own taste or with whatever you have on hand. Grilling the sandwich in a stovetop toaster gives it that authentic street-style crispiness, but a panini press or a simple skillet works just as well. Before grilling, I like to sprinkle a little chaat masala on the filling for an extra punch of flavor, just like the street vendors do!

If you enjoy the added crunch, you could finish it off with a sprinkling of fine sev, for a street-style presentation. For those who love extra layers, sliced onions and bell peppers add texture and depth, while the cheese lovers out there can take it up a notch with a generous sprinkle of grated Amul or mild cheddar cheese.

Bombay Toastie (Mumbai Masala Grilled Sandwich) with Paneer

A healthy twist on the Mumbai street sandwich with spiced mashed potatoes and crumbled paneer.


Ingredients

The Masala Paneer Filling

  • 1 large baking potato (Idaho or Russet potato recommended), cut in quarters, boiled and peeled
  • 2 tbsp neutral cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp turmeric
  • 1/4 tsp asafetida
  • 1 small onion, diced
  • salt, to taste
  • 12 garlic cloves, smashed, peeled and minced
  • 1/2 inch piece of ginger, peeled and minced
  • 1/2 tsp red chili powder (optional – use less for milder heat)
  • 1/2 tsp garam masala
  • 1 medium tomato, diced
  • 1/4 cup of peas, thawed if using frozen (optional)
  • 1 medium carrot, finely chopped or shredded (optional)
  • fresh cilantro/coriander, finely chopped
  • 1 cup (8 oz) paneer, crumbled (see Variations)

Cilantro-Mint Chutney Spread (see FAQs & Notes)

  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves with stems
  • 1 Thai or bird’s eye chili (use Serrano or jalapeño chili for less heat)
  • 1/2 inch piece of ginger
  • 1 tbsp dry roasted chana dal (use raw or toasted peanuts if you don’t have)
  • 1/4 tsp cumin seeds
  • 1/2 lime, juiced
  • salt, to taste
  • 1/2 tsp sugar
  • 2 tbsp water, or as needed

For the Toasties (Makes 4)

For every sandwich

  • 2 slices of whole grain white bread, (or your favorite kind of sandwich bread)
  • Prepared Cilantro-Mint Chutney Spread, as needed
  • 1/2 cup prepared Masala Paneer Filling (see Variations)
  • Chaat masala, as needed
  • Butter, for grilling, as needed

Instructions

Making the Masala Paneer Filling

  • Mash the boiled potatoes slightly, leaving them a little chunky.
  • Heat oil in a skillet or a sauté pan. Add mustard and cumin seeds along with the turmeric and asafetida.
  • When the seeds splutter and the spices froth, add the onion with the garlic and ginger. Sauté for a few of minutes till the onion is translucent.
  • Add the chopped tomatoes along with peas and carrots , if using and mix well. Season with salt, red chili powder and garam masala. Cook for 8-10 minutes on medium low heat, stirring occasionally, till oil separates out and the vegetables are soft. 
  • Then add the mashed potatoes, mix well and adjust seasonings. Add a little water, if its too thick and simmer covered for about 5 minutes.
  • Take it off the heat and mix in the cilantro. Let it cool for about 5 minutes.
  • Add in the crumbled paneer. Adjust seasonings, if needed and stir to combine everything well.

Making the Cilantro-Mint Chutney

  • Transfer all the ingredients for the chutney to a NutriBullet or a small food blender and process to a smooth paste. 
  • Transfer to a small serving bowl.

Making the Toasties

For every sandwich

  • Smear the prepared chutney spread on to one of the slices of the bread.
  • Layer the Masala Paneer filling onto the other slice of the bread. Sprinkle some chaat masala on it. (see Variations)
  • Place the slice of bread with the chutney over the one with the Masala Paneer filling.
  • Butter the top and the bottom of the sandwich and transfer it to the hand toaster. Alternatively you can transfer it to the grill pan or an electric panini press.
  • Grill till over medium heat till it turns golden brown on both sides.
  • Serve immediately with ketchup or your favorite condiment.

Step-by-Step Details

Step: 1

Recipe Variations

If you want to keep it dairy-free, crumbled tofu works as a great substitute for paneer, while shredded rotisserie chicken or crumbled boiled egg whites would be a couple other great ways to add protein.

In addition to the Masala Paneer Filling, you can also layer in sliced onions, tomatoes, bell peppers and cucumbers.
