2 tbsp pistachios, roughly chopped
2 tbsp cashews, roughly chopped (optional)
1 tbsp pumpkin seeds
1/2 tbsp (1 1/2 tsp) white sesame seeds
1/4 tsp ground cardamom
1/8 tsp ground nutmeg
1/8 tsp salt
2 tbsp honey or maple syrup
1 tbsp almond oil (see Variations)
4–5 small dates, pitted and roughly chopped (see Variations)
Instructions
Preheat the oven to 325°F and line a baking sheet with parchment paper.
In a large bowl, combine the oats, nuts, seeds, spices and salt.
Add the almond oil or melted ghee and honey.
Toss well until everything is evenly coated and well combined.
Spread it out in an even layer on the prepared baking sheet.
Bake for 15-18 minutes, stirring once halfway through, until lightly golden and fragrant.
Take the baking sheet out of the oven and let the granola cool completely on the tray so it crisps up.
Once cooled, fold in the finely chopped dates, breaking up the granola gently into small clusters.
