This recipe is my modern take on the traditional Maharashtrian Naralachi Karanji (also known as Gujiya in North India). In Maharashtra, we celebrate Narali Poornima (the Coconut Festival) on the same day as Raksha Bandhan or Rakhi Poornima. So, when I started thinking about a festive treat for Raksha Bandhan that still felt tied to tradition, coconut was a must!

Why Puff Pastry?
The modern spin in my recipe comes from using store-bought frozen puff pastry. Traditionally, the dough for Karanji is made from scratch. All purpose flour (maida) is kneaded with a little amount of hot oil or ghee (to give the pastries a crispy texture) and enough water to form a firm dough. While homemade dough makes the most incredible pastries, it’s not always feasible when time is tight. This is where the ready-to-use puff pastry is a game-changer! It eliminates the need to knead, roll, and rest dough, cutting down the prep time significantly. And the best part? You still get that same flaky, buttery texture that’s perfect for encasing the sweet coconut filling.
Using puff pastry also adds a delightful layer of convenience when you’re hosting or looking to whip these rolls up as a last-minute treat. You can prep them quickly, pop them in the oven and enjoy beautifully golden, flaky rolls without the mess of deep-frying.
Pro Tips for using Puff Pastry
Use frozen puff pastry: Make sure to thaw it overnight in the fridge or for about 30 minutes at room temperature before you roll it out. You want it soft enough to work with but still cold, so it holds its structure.
Don’t overfill: Be careful not to overfill the puff pastry, as it can spill out during baking. A heaping tablespoon of the coconut mixture is just enough.
Seal tightly: Make sure to seal the edges of the puff pastry rolls tightly to prevent the filling from escaping.

Pro Tip:
Bake until golden: The rolls should be golden brown and flaky. This usually takes around 15-20 minutes, but keep an eye on them to ensure they don’t burn.
When these Coconut Karanji Rolls come out of the oven, you can serve them warm or at room temperature, thus making them convenient for any gathering. If you want to make them extra special, dust them lightly with powdered sugar right before serving.
The Sweet Coconut Filling
Just like the traditional Karanji, these rolls are filled with a fragrant, sweet coconut filling. However, I’ve made a couple of tweaks to enhance the flavor profile. Instead of jaggery, which is commonly used, I opted for coconut sugar to double down on the coconut flavor. Coconut sugar has a subtle caramel-like sweetness that pairs beautifully with the other ingredients without overpowering them.
To add a little extra crunch and richness, I stir in sliced almonds toward the end of the filling preparation. The nuttiness of the almonds complements the coconut perfectly, and together with the hint of cardamom, it creates a filling that’s both aromatic and indulgent.

1 frozen puff pastry sheet (approx. 10 in. x 15 in.), thawed per package instructions
all purpose flour, for dusting

Instructions
Making the Filling
In a small saucepan, combine all the ingredients for the filling, except the toasted sliced almonds.
Cook on the medium low heat, stirring frequently, to make sure it doesn’t stick to the bottom of the pan.
Continue cooking for 15-20 minutes till the coconut sugar is completely dissolved, the heavy cream is fully absorbed and the coconut is cooked through.
Turn the heat off and stir in the toasted sliced almonds.
Cool for 20-30 minutes, till it comes down to almost room temperature.
Making the Rolls
Preheat the oven to 375 °F.
Dust the working surface with some all purpose flour and place the thawed pastry sheet on it.
Dust some more flour on the pastry sheet and roll it out to make it thinner.
Cut the sheet into 5–3 in. wide equal strips along its length and then further cut each strip into 5 pieces, thus making 2 in. x 3 in. sized rectangular pieces. You should have about 25 pieces.
Spoon about 1 tablespoon of the prepared coconut filling into the center of the cut pastry piece.
Brush or use your pointer finger to dab water on one end of the of the pastry piece.
Roll the opposite end over the filling and press it on the watered side to seal it (see FAQs & Notes for prep ahead instructions).
Baking the Rolls
Transfer to a parchment paper lined baking sheet. Make sure to place them about 1-2 inches apart.
Bake for 20-25 minutes till they turn golden brown.
Coconut sugar is available in most grocery stores or online on Amazon. If you can’t find it, you can use same quantity of powdered jaggery (i.e. palm sugar) or light brown sugar.
Can the rolls be prepped ahead?
Once the rolls are assembled, you can either refrigerate the unbaked rolls for up to 8 hours or freeze them on a parchment paper lined baking sheet for about 2 hours and then pack them in freezer safe plastic bags for up to 3 months. Bake them frozen per the recipe, do not thaw.
