Inspirations From the Farmers Market

This Cumin-Scented Cabbage & Fennel Slaw was born out of a weekend wander through the San Francisco Ferry Building Farmers Market. I spotted green and purple cabbage sharing the same bin and could not resist the delicate fennel bulbs with their feathery fronds, sitting in a bin right next to them.

I had an aha moment when I returned home – why not turn these crisp, shredded vegetables into a refreshing slaw?! A squeeze of sweet Meyer lemon juice brightened the flavors, and a quick cumin-green chili ghee tadka (just like the Indian raitas) added warmth and crunch.

The cabbage serves as a crisp, neutral canvas, while the fennel’s subtle anise note brings elegance, and the purple cabbage adds a playful pop of color. I relished every bite in my rice bowl that night with basmati rice and some matar paneer.

I also love serving it as a bright salad next to my Masala Chicken Quesadillas or tucked in my Chicken Tikka Banh Mi sandwiches. It adds texture and lift to Dosa Spring Rolls and can easily standalone as a light, refreshing salad with add-ons like cooked chickepeas, grilled paneer/tofu cubes or shredded rotisserie chicken to make it more filling and protein-rich.

For variations, add whole or crushed roasted peanuts for extra crunch and nutty depth, or swap the green chilies for crushed red chili pepper for a gentler heat. Thinly sliced red onions bring sharpness, and Granny Smith apples, when in season, add a lovely crisp sweetness.

You can use either green cabbage, purple cabbage, or a combination like I did. I have even made it with thinly sliced kohlrabi, or navalkol, as it is called in my native language, for an equally refreshing twist. These small tweaks let you enjoy the slaw in different ways while keeping it fresh, flavorful, and subtly nourishing.

Ingredients

  • 1/4 medium-sized green cabbage, shredded
  • 1/4 small-sized purple cabbage, shredded (optional)
  • 1 bulb of fennel, trimmed and thinly sliced
  • 1/2 tsp granulated sugar or honey (optional)
  • Salt, to taste
  • Fennel fronds, roughly chopped (optional)
  • 45 cilantro/coriander sprigs, leaves and tender stems minced
  • 1/2 lemon, juiced

Seasoned Ghee Dressing

  • Scant 1/4 cup ghee or any neutral cooking oil
  • 1 tsp cumin seeds
  • 1/2 tsp asafetida (optional)
  • 1 Thai/bird’s eye chili, thinly sliced (or red chili flakes for milder heat)

Instructions

  • In a bowl, combine the shredded cabbage and sliced fennel.
  • Season with salt, sugar or honey, if using and squeeze juice from the lemon over the mixture.
  • Prepare the seasoned ghee by warming ghee in a small skillet over medium heat until it melts and shimmers. Add the cumin seeds and wait for them to crackle. Add green chilies and asafetida if using. Swirl the skillet for even heating for about 10-15 seconds.
  • Pour the seasoned ghee over the cabbage-fennel mixture.
  • Combine well and finish with chopped fennel fronds and cilantro.
  • Serve at room temperature or slightly chilled.

Make Ahead & Storage Info

  • The slaw can be refrigerated for up to 3 days. The vegetables will soften slightly and lose some crunch, but it will still taste delicious.

  • Let it sit at room temperature for 20 to 30 minutes before serving for the best flavor and texture.

Make it vegan!

Substitute ghee with neutral cooking oil to make the salad vegan.
