For the Cabbage
1 whole Napa cabbage, cut into 4 wedges lengthwise
Salt and fresh cracked black pepper, to taste
2 tbsp olive oil (about 1/2 tbsp per wedge)
For the Salad
1/2cupthawed frozen peas
1/2cup shredded carrots
1/4cup roasted peanuts, for garnish
1 medium green onion, thinly sliced
4–5 sprigs of cilantro/coriander, chopped
1–2 tsp sesame seeds
For the Spiced Peanut Dressing
2 tbsp chunky peanut butter (see Variations)
Juice of 1/2 lemon
1 tbsp hot honey (or to taste)
For the Spiced Oil (phodani / tadka)
2 tbsp neutral oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp turmeric
1/4 tsp asafetida (hing)
Instructions
Grill the cabbage
Preheat a grill pan or outdoor grill over medium-high heat.
Place the cabbage wedges on a tray and sprinkle with salt and pepper.
Drizzle each wedge with about 1/2 tablespoon olive oil.
Grill the wedges on all 3 sides until charred on the outside and tender but still slightly crisp in the center, turning occasionally for even browning.
Take off the grill and let cool slightly, then slice into 1/2-inch thick strips.
Make the dressing
In a medium heatproof bowl, whisk together the peanut butter and lemon juice.
Heat the neutral oil in a small pan over medium heat. Add mustard and cumin seeds and let them splutter. Add the turmeric, and asafetida. Cook for a few seconds until fragrant, then immediately pour the hot spiced oil over the peanut butter mixture.
Stir until smooth, then mix in the hot honey. Taste and adjust salt if needed.
Assemble the salad
Place the sliced grilled cabbage on a serving platter.
Scatter the peas and shredded carrots over the top.
Spoon the dressing over the salad.
Finish with roasted peanuts, green onions, cilantro, and sesame seeds. Serve warm or at room temperature.
Regular green cabbage works well here. Cut it into wedges and grill until lightly charred and tender. It may take slightly longer to soften compared to Napa cabbage. Red or purple cabbage works too and adds beautiful color contrast.
