An Effortless Fusion

Indian food is definitely my first love—but Mexican cuisine, with its vibrant, bold flavors, comes in at a very close second. Over the years, I’ve often drawn inspiration from it to create some of my favorite fusion dishes—like Mexican Pohe, a zesty stir-fried flattened rice, or fun mash-ups like Chicken Tikka Naan Tacos and Spiced Cauliflower Phulka Tacos. So for Cinco de Mayo today, I’m blending the two in the most delicious way: Grilled Tandoori Fish Tacos.

It’s the kind of fusion that feels effortless and exciting—perfect for weeknight taco dinners, summertime grilling, or just when you’re craving something a little different but still packed with familiar flavors.

East Meets West on a Tortilla

Tacos have always been my go-to Mexican dish, and this time I gave them a fun desi twist. Honestly, I’ll turn just about any meal into a taco—like my Anda Bhurji Breakfast Tacos, which are a weekend staple at our place. The star of the show is halibut, my personal favorite white fish. It’s firm, flaky, and grills beautifully.

I cut the fillets into taco-friendly strips and coat them in a mix of warm, smoky Indian spices—tandoori masala, cumin, coriander, Kashmiri red chili, garlic powder, and a touch of crushed kasuri methi. A quick drizzle of oil helps the spices cling to the fish, and just like that, it’s ready for the grill.

Grilling takes just a couple of minutes on a hot grill pan—about one minute per side. The fish gets a gorgeous char while staying tender and flaky inside. It’s fast, flavorful, and fuss-free—ideal for weeknights or easy entertaining.

Toppings That Pop

To top things off, I make a quick mango-jalapeño salsa. Mangoes are in season right now, and their natural sweetness pairs beautifully with the spice of the grilled fish. The jalapeño brings a touch of heat, while lime juice brightens everything up.

To tie everything together, I whisk up a cilantro-lime yogurt drizzle. The cooling yogurt balances the spice, adds creaminess, and makes the tacos look extra inviting with its vibrant green swirls.

I also like to keep things practical and usually reach for a jar of store-bought tomato salsa, that I keep handy in my pantry, to spoon over the tacos. A spoonful of it gives the tacos extra depth of flavor—and major convenience—to these tacos. It adds a tangy, familiar flavor and a bit of juiciness to each bite—plus it saves time when I’m in a rush.

You can also switch things up by using a spoonful of jarred Tikka Masala Sauce or Butter Masala Sauce in place of the salsa.

It adds a rich, creamy Indian flavor twist that pairs beautifully with the grilled fish and cooling yogurt..

Make It Your Own

These tacos are endlessly customizable! If you’re not into fish, you can easily substitute with shrimp or prawns—just season and grill them the same way. You can also switch up the toppings with creamy avocado slices, crunchy cabbage or lettuce, and a drizzle of your favorite hot sauce to tie it all together.

For a vegetarian twist, tandoori-spiced mushrooms or zucchini make a fantastic alternative. I like to quarter large button mushrooms and slice zucchini into thick half-moons before tossing them with oil and spices. They soak up all the bold flavors and grill up with a gorgeous smoky char in just a few minutes!

You can also mix and match—combine diced fish or shrimp with veggies like mushrooms and zucchini, toss everything together with the spices and oil, and simply sauté it all in a regular frying pan for 3–4 minutes. No grill pan needed—just spoon the flavorful filling onto warmed tortillas, add your toppings, and you’re good to go!

For a low-carb option, swap the tortillas with butter lettuce cups, or skip them altogether and turn it into a taco bowl—serve the grilled fish over a bed of mixed greens, black beans, roasted corn, rice, or quinoa. You can also mix and match toppings to your liking—think sour cream, cilantro-lime crema, shredded cabbage, or a crunchy slaw. The possibilities are endless!

Ingredients

For the Fish

  • 1 lb halibut fish fillets, cut into 1×3″ strips (see FAQs & Notes + Variations)
  • 1 tbsp Tandoori Masala (or garam masala)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp Kashmiri red chili powder
  • 1/2 tsp regular red chili powder (optional)
  • 1 tsp garlic powder
  • 1/2 tsp crushed Kasuri Methi (dried fenugreek leaves)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 34 tbsp neutral oil (for coating and grilling)

For the Mango Jalapeño Salsa

  • 1 ripe but firm to touch mango, finely diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced (seeded for less heat)
  • Juice of 1/2 lime
  • Salt, to taste
  • Chopped cilantro (optional)

For the Cilantro Lime Yogurt Sauce

  • 1/2 cup plain unsweetened Greek yogurt (or sour cream)
  • 45 sprigs of cilantro/coriander leaves, finely chopped
  • Zest and juice of 1/2 lime
  • Salt, to taste
  • Splash of water, to thin

To Assemble

  • 12 street-style small corn or flour tortillas
  • Jarred salsa (roasted tomato or tomatillo)
  • Optional toppings: thinly sliced jalapeños, pickled onions, chopped lettuce or cabbage, slaw, avocado slices, cilantro leaves, etc. (See Variations)

Instructions

Marinate the Fish

  • In a shallow mixing bowl or a plate, combine fish strips with all the spices, kasuri methi, salt, pepper, and oil.
  • Toss well to coat evenly.
  • Set aside to marinate while preparing toppings.

Prepare the Salsa

  • In a small bowl, mix mango, red onion, jalapeño, lime juice, and salt.
  • Give it a good stir and chill until ready to serve.

Make the Yogurt Sauce

  • Whisk yogurt till smooth and stir in the cilantro, lime juice, salt, and a splash of water until smooth and drizzle-worthy.

Grill the Fish

  • Preheat the grill pan over medium-high heat for 3-4 minutes.
  • Once you see wisps of smoke rising from the pan, grill the fish strips for 1–2 minutes per side, until they’re cooked through and lightly charred with beautiful grill marks.

Warm the Tortillas

  • Warm tortillas on the same grill pan or directly over a gas flame until soft and slightly charred.

Assemble the Tacos

  • Top warmed tortillas with grilled fish, spoon over mango salsa, drizzle a little yogurt sauce and finish with any of your favorite toppings and a dab of jarred salsa.
