But I soon realized that while convenient, they often have an overly yeasty flavor (which can lead to bloating) and contain ingredients that are hard to recognize.

Once I discovered how quick and easy it was to make naan at home using just a few simple ingredients like Greek yogurt and baking powder, I made the switch. While store-bought versions may be convenient, homemade naan gives you full control over what goes in. There are no preservatives, just wholesome, nourishing ingredients.

Now, instead of relying on store-bought naan, I make a batch of my homemade High-Protein Instant Stovetop Naans and freeze them for later. They reheat beautifully—just pop them in the toaster, and they’re warm, soft, and ready to serve in minutes!

My Secret to High-Protein Naan

My secret to making these naans soft, chewy, and packed with protein lies in the thoughtful choice of ingredients. Rather than using traditional yogurt or milk, I opt for cottage cheese. It not only adds moisture and a subtle creaminess but also significantly boosts the protein content. Unlike homemade naans made with Greek yogurt, which can have a tangy flavor, these naans maintain a more neutral, slightly savory taste, making them a perfect complement to any curry or dish.

Stovetop Naan

This lets the top side roast just like it would in a traditional clay oven. This method gives the naan those beautiful charred spots while keeping the inside soft and chewy. Note: This method doesn’t work with a nonstick pan. If you don’t have a flat pan, a cast iron skillet is a great alternative. Additionally, this method will work for an electric coil stove but not for an induction cooktop. Simply flip the naan and grill the other side on the pan if using a nonstick pan or an induction stove.

Serving Ideas & Pairings

These naan are delicious as is, but I love topping them with a mix of minced cilantro, green chilies, and garlic before cooking. A swipe of salted butter at the end takes them to another level. They pair beautifully with rich curries like Rustic Indian Chicken Curry or Methi Matar Malai.

Ingredients

For the Naan Dough

  • 2 cups bread flour (see FAQs & Notes + Variations)
  • 1 cup low-fat plain cottage cheese (see FAQs & Notes + Variations)
  • 1 1/2 tsp baking powder (see FAQs & Notes )
  • 1/4 tsp salt, (optional, since cottage cheese already has)
  • 1/4 cup water or milk, divided + some more for brushing on top before grilling (see FAQs & Notes )

Optional Toppings

  • 1 green chili, minced
  • 34 sprigs of cilantro/coriander leaves, minced
  • 12 cloves of garlic, minced
  • butter or ghee, for finishing (see Variations)

Special Equipment

  • cast iron pan or skillet

Instructions

Preparing the Dough

  • In a medium mixing bowl, add the flour, cottage cheese, baking powder and salt (if using).
  • Mix with a spatula or wooden spoon until it forms large lumps.
  • Add half the amount of water, about 2 tablespoons and knead the dough for until it comes together in a ball. 
  • Add the remaining 2 tablespoons of water and knead for a few more minutes till it forms a soft ball of dough. (see FAQs & Notes)
  • Let it rest till you prepare the toppings.
  • Preheat the cast iron pan over medium heat for about 8-10 minutes till it gets very hot and you see light smoke off its surface.

Rolling the Naans

  • Take a small bowl and fill it with some water.
  • Dump the  dough onto a lightly floured surface and knead for a few minutes until smooth.
  • Roll it into a log and divide it into 6 equal pieces. Shape each piece into a ball.
  • Using a small amount of flour to dust the surface and the rolling pin, roll each piece into a flat oval or circle, about 1/4″ thickness.
  • Using your fingers or a pastry brush, apply a thin layer of water to the top side of the rolled out dough.

Stovetop Grilling

  • Place the rolled dough over the preheated cast iron pan, with the top side with the layer of water down.
  • Immediately press the herbs and garlic on the top side, using a wooden spatula.
  • Cook for about a minute, until you see large bubbles forming all over the top side.
  • Carefully lift the pan and turn it upside down over the flame to directly grill the top side of the naan (see FAQs & Notes).
  • Grill over the direct flame for about a minute till the top side is lightly charred.
  • Once both the sides are grilled, the naan should come off the pan very easily.
  • Brush with butter and serve warm.

Why bread flour?

Chosen for its higher protein content, bread flour gives the naan that chewy, soft texture you expect from a classic naan. If you just can’t find it, regular all purpose flour works as well.

What type of cottage cheese to use?

For this recipe, I’d recommend using low-fat or full-fat cottage cheese but make sure to use the small curd type.

No cast iron pan or have an induction cooktop?

Simply flip the naan and grill the other side on the pan if using a nonstick pan or if using an induction cooktop.

Got leftovers?

Sore any leftover naans wrapped in aluminum foil in refrigerator for up to 3 days or freeze, wrapped in foil and packed in freezer safe bags for up to 3 months.

Cut in half and reheat in a toaster.

Why is my naan dough dry or crumbly?

The dough should be soft, smooth, and pliable, not dry or crumbly. Cottage cheese and bread flour can vary in moisture and absorption, so you may occasionally need a little more water than the recipe calls for. Add water gradually until the dough comes together and feels soft and easy to work with.

What should the naan dough feel like?

The dough should feel soft, smooth, and pliable with just a slight tackiness. It shouldn’t be stiff, dry, or crumbly. If it feels dry while you’re kneading, add a little water, a teaspoon at a time, until you get the right consistency.

Can I skip the baking powder?

I don’t recommend skipping the baking powder. Since these are instant naan made without yeast, baking powder is the leavening agent that helps the naan puff and gives it a soft, tender texture.

Why didn’t my naan puff up?

A few things can affect how much the naan puffs. Make sure your baking powder is fresh and that your pan is thoroughly heated before cooking. The dough also needs to have enough moisture to create steam as it cooks, so if your dough feels dry, add a little more water. Finally, avoid rolling the naan too thin, as a slightly thicker naan will have a better chance of puffing.

Why does my naan look different from the ones in your video?


There can be some variation depending on the moisture content of the cottage cheese, the flour you use, how thinly you roll the dough, and the heat of your pan. Don’t worry if yours doesn’t look exactly like mine! The goal is a soft, pliable dough and a hot cooking surface to help create those characteristic bubbles and charred spots.

Recipe Variations

Substitute half the amount of bread flour with whole wheat flour or other whole grain varieties like spelt.

If you can’t find cottage cheese easily, swap with plain Greek yogurt.

Play with other toppings like green onions, red chili flakes, cumin or carom seeds.

In addition to or in place of butter/ghee, you can sprinkle shredded cheddar or mozzarella cheese on the naan after you take them off the stove.

Just wanted to let you know that these naan turned out amazing! I followed the recipe and it worked out so well. Just that I have induction stove, so I roasted both sides on the pan itself, like you had mention in the notes section.

I wouldn’t recommend skipping the baking powder because it acts as the leavening agent here. Since there’s no yeast in my recipe, the baking powder helps the naan puff up and stay light, soft and tender. Skipping it could make the naan dense and flat. Hope this helps!
