It has two versions—a stew or a baked dish with carefully layered slices of eggplant, zucchini, tomatoes, peppers, onions, garlic, herbs, and olive oil. The bhaji is a delicious Maharashtrian-style stew of eggplant and potatoes simmered in a sweet-spicy curry. The result of combining the two? I wanted to elevate that—both in presentation and texture. So, I thinly sliced the eggplant and potatoes, tossed them with a bold spice blend of Maharashtrian kala/goda masala. Like most Maharashtrian recipes, I paired the masala with jaggery and ground roasted peanuts. I arranged the spice-coated slices in a circular pattern in a baking dish. The colors and textures played off each other beautifully!
The oven does the rest—coaxing out caramelized edges, melding the flavors together, and turning this humble combo into something elegant and deeply satisfying.

3 medium Yukon gold potatoes, halved along the length and thinly sliced (see Variations)
4 tbsp neutral oil, divided
2–3 garlic cloves, minced
salt, to taste
2 tbsp of the Maharashtrian Kala/Goda masala
2 tbsp ground jaggery,
2 tbsp finely ground roasted unsalted peanuts
1/2 tsp or to taste red chili powder, optional
3–4 springs of cilantro, minced, for garnishing
2 tbsp fresh grated coconut, frozen thawed, for garnishing

Instructions
Preheat the oven to 375°F/190°C.
Add the sliced veggies along with 3 tbsp of oil, chopped garlic and all seasonings to a large bowl.
Toss to combine everything well, making sure all the vegetable slices are evenly coated with oil and seasonings.
Grease the baking dish with the remaining 1 tbsp of oil.
Arrange the slices alternating with each other into a well greased baking dish.
Bake in the oven for 40-45 minutes.
Garnish with cilantro leaves and grated coconut.
Serve hot or at room temperature with Indian flatbreads or rice.
