Jalapeño Cheddar Dhokla is my take on an Indian-inspired Thanksgiving side. It is a playful crossover between classic khaman and the jalapeño cheddar cornbread flavors I love! It brings together the airy and tangy texture of the savory steamed chickpea flour cake I grew up with and blends it with the comforting richness of jalapeño cheddar cornbread, creating something warm, familiar, and completely irresistible.

The Inspiration

Dhokla has always been one of my favorite Indian snacks to serve because it comes together quickly with a few pantry staples and is naturally gluten-free, eggless, and vegan, which makes it an easy, allergy-friendly appetizer for everything from a casual afternoon tea to a party spread.

Cornbread is a staple of Thanksgiving in the United States, and when I first tried it, I realized how its warm crumb and gentle sweetness echoed the look and feel of Gujarati khaman dhokla. That similarity made me curious, so I served it on my Thanksgiving table one year and also brought dhokla to a Thanksgiving potluck at work. Everyone was both intrigued and delighted by it.

That moment stayed with me because it showed how easily this savory steamed chickpea flour cake could fit into a holiday menu, even for people tasting it for the first time. This Jalapeño Cheddar Dhokla grew from that spark of connection. It keeps the light and fluffy structure of traditional khaman while picking up the bold cheddar and jalapeño notes that make cornbread so comforting. This Jalapeño Cheddar Dhokla brings together the best of both worlds, blending classic khaman dhokla ingredients with the flavors of a jalapeño cheddar cornbread. Ingredients

For the Batter

  • 1 cup besan (gram flour)
  • 2 tbsp coarse semolina (rava/sooji) (see Variations to make it gluten-free)
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder
  • 1 tbsp oil
  • 1/2 cup water (adjust for smooth, slightly thick batter)
  • 12 tbsp fresh squeezed lemon juice
  • 1/2 tsp baking soda (see FAQs & Notes for substitutes)
  • 1/2 cup cheddar cheese, grated into large shreds (see Variations)

For the Topping (see FAQs & Notes + Variations)

  • 1 jalapeño, thinly sliced
  • melted butter or ghee for brushing
  • chopped cilantro for garnish

Special Equipment


Instructions

Prepare the Batter

  • In a large bowl, whisk together besan, semolina, sugar, salt, turmeric, and oil.
  • Gradually add water to make a smooth, slightly thick but pourable batter.
  • Fold in the cheddar shreds.

Add Leavening

  • Just before steaming, sprinkle baking soda over the batter. 
  • Immediately pour the lemon juice over the baking soda to activate it. The baking soda and lemon juice mixture will start to froth immediately.
  • Fold gently to combine it into the batter. 

Pour & Top

  • Grease an 7×5-inch rectangular or 8×8-inch square pan.
  • Pour in the batter evenly and arrange jalapeño slices on top so that each cube will have one when cut.

Steam

  • Set up a stovetop steamer: large pot with ~1 inch water, and a rack or trivet inside.
  • Place the pan in the pot and cover with a tight-fitting lid.
  • Steam over medium heat for 18-20 minutes, or until a skewer comes out clean. Avoid opening the lid early.

Finish & Serve:

  • Take the baking dish out of the steamer and brush the top with melted butter or ghee for shine.
  • Let the dhokla rest about 10 minutes before cutting into 8 large or 12 medium-sized cubes.
  • Sprinkle with chopped cilantro.
  • Serve warm with hot sauce or ketchup on the side. 

Recipe FAQ’s and Notes

Tips for Success

  • Batter consistency: thick enough to hold cheese and jalapeños, but not stiff.
  • Cut into 1–1.5 inch cubes for perfect individual bites.
  • Steam immediately after adding baking soda and lemon — that’s when the magic happens!
  • Fresh lemon juice adds brightness and tang, so don’t skip it.

Prefer using Eno Fruit Salt?

Use 1 tsp Eno fruit salt instead of ½ tsp baking soda in the recipe

Got Baking powder, no soda?

Use 1 tsp baking powder in place of ½ tsp baking soda in the recipe but may give a slightly less airy texture than baking soda or eno.

Pro Tip for Steaming

Steam immediately after adding the leavening (baking soda, enough or baking powder). Don’t let the batter sit, or it will lose its lift.

Skip the traditional tempering!

The Jalapeño Cheddar Dhokla will already be flavorful, moist, and visually striking with the jalapeño slices on top. You don’t need to use the traditional tempering of mustard seeds seasoned oil for topping.

Optional finishing touches:

  • Light brush of melted butter or ghee over the top once it’s out of the steamer to enhance richness and shine.
  • Sprinkle of finely chopped cilantro for color and freshness.
  • Tiny pinch of flaky salt on the top if you want the cheddar flavor to pop more.

Recipe Variations

Swap part of the cheddar with sharp white cheddar for a deeper, nuttier flavor.

Sprinkle a pinch of smoked paprika on top of the batter in the baking dish for a subtle smoky note.

Make it gluten-free by substituting rava/sooji with an equal amount of cornmeal. It adds a subtle cornbread-like flavor and gives the dhokla a light, tender structure without making it dense.
