It’s made by frying cooked rice in cumin-scented ghee, tossing in green peas (if I have them sitting in my freezer if not, they’re skipped), and finishing with fresh dill. The cumin seeds infuse the ghee with warmth and aroma, the peas add a soft pop of sweetness, and the dill brings a fresh, herbal note.

Adding fresh dill at the end is my personal twist—it’s what really sets this dish apart. I like to stir in a generous handful of finely chopped dill just before serving. It’s a small step that makes the dish feel a little more thoughtful and turns something everyday into something special.

Alternative Method

While I often make this dish by frying leftover rice in cumin-scented ghee for a quick weeknight meal, I also use an alternative method where I cook the rice from scratch in the cumin-infused ghee itself. For this, I start by toasting the cumin seeds in ghee, along with a few other whole spices like bay leaves, black and green cardamoms, cloves, whole black pepper, cinnamon sticks or barks.

I then add rinsed basmati rice, water (twice the amount of rice), and salt, cooking it just as you would plain rice. Once done, I stir in frozen peas and chopped dill off the heat.

Both methods yield delicious results—whether you’re transforming leftovers or making the rice fresh, the warm cumin flavor and bright herbal finish shine through.

Description

Quick & easy, fried rice with peas and dill in cumin-infused ghee—a fresh take on jeera rice, perfect as a side or rice bowl base.


Ingredients

Units Scale
  • 1 tbsp ghee (see Variations)
  • 1/2 tsp cumin seeds
  • 1 cup cooked basmati rice (see Variations)
  • 1/4 cup frozen green peas (no need to thaw)
  • Salt, to taste
  • 45 sprigs fresh dill, finely chopped (see Variations)

Instructions

  • Heat the ghee in a nonstick frying pan over medium heat.
  • Add the cumin seeds and let them sizzle for a few seconds until aromatic.
  • Add the cooked rice and frozen peas to the pan.
  • Season with salt and give everything a good stir.
  • Let it cook for a couple of minutes, allowing the peas to thaw and the flavors to come together.
  • Turn off the heat, stir in the chopped dill.
  • Serve warm (see Variations for traditional cooking method).

A note about this recipe

This recipe is designed for already-cooked basmati rice. It’s a great way to use up leftovers or to quickly repurpose plain rice into something more flavorful.

Scaling Up

This recipe is easy to double or triple. Just use a wider pan and give the rice enough space to fry without clumping.

Peas

For best results, use frozen peas straight from the freezer. They thaw quickly as they cook in the pan and retain their bright green color and texture.

Fresh peas are not recommended in the stir-frying method, as they take longer to cook and can affect the timing. See Alternative Method below in Variations section for using fresh peas. 

Recipe Variations

Alternative Method (From Scratch):
If you’re not using leftover rice, you can cook the rice directly in cumin-scented ghee. Start by heating the ghee and blooming the cumin seeds. Add rinsed basmati rice, water (twice the amount of rice), and salt. Cook the rice until tender, then stir in frozen peas and chopped dill after turning off the heat. If using fresh peas, add them along with the rinsed rice. 

Make it vegan by substituting ghee with a neutral cooking oil.

Grain Swaps:
You can use cooked brown basmati rice or quinoa for a more wholesome twist. Both work beautifully with the cumin and dill, and offer extra fiber and protein.

Herb Alternatives: Don’t have dill? Try fresh cilantro or flat-leaf parsley for a different but still fresh-tasting twist.
