A Taste of Summer

Pickles are an Integral part of Indian cuisine. Whether it’s the North, South, East, or West, every regional kitchen has its own tangy, spicy, sometimes sweet version served alongside lunch, dinner—and sometimes even breakfast! This Maharashtrian-style Kaireecha Loncha stands out for its bold contrast of flavors.

Chunks of tart green mango (that’s kairee in Marathi, or kairi in Hindi) are tossed in a fiery red chili and salt mixture, mellowed just enough with a touch of sugar. It’s a small-batch pickle that delivers big on flavors—both heat and sweetness, unlike most oil-heavy or overly salty versions you’ll find on store shelves.

A Family Tradition

One of my most vivid childhood memories from hot summer months in Pune is seeing my mom drying sabudana papdi or potato kees outdoors, and of course—making jars of all kinds of pickles. Among all the pickles she made, this Kaireecha Loncha—a hot and sweet green mango pickle—was a seasonal highlight. My mom and grandmom, both made this pickle every summer using homegrown mangoes from our backyard. Their version wasn’t oily or overly spiced like store-bought ones. Instead, it was fresh and full of texture, with crunchy green mango chunks coated in a bold, balanced mix of sweet, spicy, and salty flavors.

And it’s incredibly easy to make. This small-batch recipe makes about a cup. Diced green mango is tossed with salt, red chili powder, and a touch of sugar. Then comes the phodani—hot oil tempered with cumin and mustard seeds, turmeric, and asafetida—poured over the mix. You can eat it right away, but letting it sit for 24–48 hours lets the flavors really settle in. After that, I refrigerate it and serve it chilled. Stored in an airtight jar away from direct sunlight, it lasts 3–4 weeks at room temperature.

Ingredient Spotlight: Green Mango

Raw green mango is the heart of this pickle. Its natural tartness makes it perfect for pickling, especially in this quick version that doesn’t require days of sun-drying or fermenting. Make sure to choose firm, unripe mangoes—ideally ones that are light green and not fibrous inside. Their crunchy texture holds up well even after marinating in spiced oil.

Green mangoes are also packed with vitamin C and antioxidants, which help boost immunity and aid in digestion—perfect for the hot summer months. And adding small amounts of spiced pickles like this one to your meals can stimulate appetite and support gut health thanks to the natural fermentation process involved and also the spices used.

Serving Ideas & Variations

Once ready, I like to store this pickle in the refrigerator and serve it chilled. It’s the perfect accompaniment to everyday meals. In Maharashtrian homes, its usually served with sheera, sweet semolina porridge. It also pairs beautifully with breakfast dishes like pohe, sanja and upma, or on the side of phodnicha bhaat. I’ve even been known to spoon a little onto buttered toast, scoop it with crackers or roll it into methi theplas (fenugreek flatbreads) for a zippy little treat.

This version is slightly sweet, but feel free to skip the sugar if you like yours sharper. You can also add crushed fenugreek or fennel seeds for extra depth, as some regional variations do.

Ingredients

Scale
  • 1 medium green mango, seeded and diced into 1 cm cubes (see FAQs & Notes + Variations)
  • salt, as needed
  • 1 tbsp sugar or adjust to taste
  • 1 tbsp red chili powder (see FAQs & Notes + Variations)

Hot Seasoned Oil Topping

  • 1/4 cup neutral cooking oil
  • 1 tsp turmeric
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp asafetida

Instructions

  • In a bowl, combine diced green mangoes, salt, sugar and red chilli powder.
  • In a small frying pan, warm oil over medium high heat and add turmeric, cumin, mustard seeds and asafetida.
  • When the seeds start to sputter, take the pan off the heat and pour the hot tempered oil over the spiced mango in the bowl.
  • Toss gently and serve right away or transfer to a clean, dry, airtight glass jar.
  • Store it at room temperature in a cool, dry place away from direct sunlight or refrigerate for 24-48 hours to allow for the mango to marinate in the spicy-sweet oil before serving (see FAQs & Notes for shelf life and storage instructions).
  • Serve chilled or at room temperature.

Choosing the green mangoes

Use firm, unripe green mangoes with a bright green skin and no yellow patches. They should be sour and crunchy—not fibrous—for the best texture and flavor.

Red Chili Powder

Maharashtrian lal tikhat (spicy Indian red chili powder) gives this pickle its signature heat and vibrant color. Adjust to taste if using a milder variety like Kashmiri red chili powder or red pepper flakes

Storage Tips

Store in a clean, dry, airtight glass jar. Keep away from moisture and direct sunlight. Refrigeration extends shelf life, but this pickle can also stay fresh at room temperature for 3–4 weeks if stored properly.

Substitute green mangoes with green Granny Smith apples for a fun twist!
