Persian cucumbers work wonderfully, but regular or English cucumbers are great options too.

Fresh coconut and crushed roasted peanuts are essential to the character of this dish. The coconut adds gentle sweetness, while the peanuts bring nuttiness and texture. A little green chili, cilantro, and sugar, jaggery, or honey bring everything together.

A traditional phodani (tadka) of hot oil seasoned with cumin, mustard seeds, and asafetida adds another layer of flavor, although I love the fresh simplicity of this version without it.

Instructions

  • Place the grated cucumbers and green mango in a bowl. If the cucumber releases excess moisture, gently squeeze it out before combining with the remaining ingredients.

Couldn’t find green mango so I made your recipe with grated green papaya and cucumbers and used lime to season. Turned out so good!!
