A Classic, Reimagined

This recipe came about thanks to my husband’s love affair with lamb seekh kebabs. They’re his go-to order every time we visit our favorite Indian restaurants in the Bay Area—and something he never tires of. So I set out to recreate that same savory, spiced flavor at home, but without the usual fillers like eggs or breadcrumbs. The result? Kebabs (and burgers!) that are all meat, all flavor, and incredibly juicy. In fact, he says these kebabs (and also the burgers) are better than anything he’s ordered at a restaurant, and trust me, he’s tried them all!

I’ve made these so many times now that they’re a regular in my house. And I love that one simple spiced meat mixture can be shaped into long skewers for kebabs or turned into thick, burger patties. No skewers? No problem. Just form the mixture into smaller logs and grill or roast them until golden and cooked through.

The Flavor Base

The real magic is in the flavor base: a fresh paste of onion, garlic, ginger, green chilies, and plenty of mint. Mint and lamb are such a natural pairing—it brings brightness that balances the richness of the meat. I season the mixture with salt, cracked black pepper, and a spoonful of store-bought meat masala, though garam masala works in a pinch.

No Fillers—just good technique

My recipe uses no fillers! No eggs, no breadcrumbs—just good technique. The secret is to mix just enough and let the natural proteins in the meat do their thing. Over-mixing is where most kebab recipes go wrong, turning the texture dense and dry. Keep a light hand, just fold the spices and aromatics in gently and your kebabs or burgers will stay tender and juicy.

This recipe is summer-ready but also totally doable year-round on a grill pan or in the oven. And because it doesn’t require marination time, it’s a quick turnaround from fridge to flame.

How to Serve (and Love) Them

When I make the burger version, I love melting cheese over the patties right after flipping them. Once grilled, they’re stacked on toasted buns with a generous swipe of cilantro-mint chutney on one side and a spoonful of Maggi Hot & Sweet Tomato Chili Sauce. Add crisp lettuce, maybe some pickled onions or a tomato slices, and you’ve got a no-fuss burger that doesn’t need anything else.

Want to lighten things up? Serve the patties in butter lettuce cups or over a bed of greens with crunchy veggies and a drizzle of chutney dressing. This mix is as versatile as it is flavorful.

For the kebabs, I simply serve them hot off the grill just with some lemon or lime wedges as appetizers or with warm naan, basmati rice and a side of cooling cilantro-mint yogurt sauce for a wholesome meal. Store-bought cilantro-lime crema is also a great shortcut and works beautifully here.

Make-Ahead and Freezer-Friendly

The raw spiced lamb mixture can be made ahead and frozen—just wrap it tightly and pop it in a freezer-safe bag. Cooked kebabs or burgers also freeze well and reheat beautifully in the oven or on a skillet. They’ll keep for up to 3 months, so it’s worth making a double batch.

You can easily swap in ground chicken or beef, and even try a plant-based version with mashed potatoes and chickpeas for vegetarian kebabs or burger patties

Ingredients

Fresh Ground Paste

  • 1/2 small onion, peeled and roughly chopped
  • 12 Thai/bird-eye green chillies, broken into halves, (optional or use milder Serrano or jalapeño peppers)
  • 1 inch piece of ginger, peeled and roughly chopped
  • 23 large garlic cloves, smashed and peeled
  • 2 handfuls of mint sprigs, use leaves and tender parts of the stem (see Variations)

For the Meat Mixture

  • 1 lb ground lamb (see Variations)
  • salt, to taste
  • freshly cracked black pepper, to taste
  • 2 tsp Everest Meat Masala or garam masala (if you don’t have garam masala, you can use 1 tsp each of ground cumin and ground coriander)
  • Prepared fresh ground paste

For Kebabs

  • Skewers (see FAQs & Notes if you don’t have skewers)
  • Serving Options
    • Lemon/lime wedges
    • Cilantro-Mint Yogurt Sauce
    • Naan (homemade or store-bought)
    • Steamed basmati rice

For Burgers

  • 4 slices of cheese, like havarti, cheddar or any other per your preference, optional
  • 4 burger buns
  • 1 large tomato, sliced
  • 1/2 medium red onion, sliced
  • 1/2 English cucumber, sliced
  • Butter lettuce leaves
  • Cilantro/mint chutney (homemade or store-bought)
  • Ketchup or Maggi Hot & Sweet Tomato Chili Sauce

Instructions

Preparing the Fresh Ground Paste

  • In a food processor, grinder, or blender, combine all the ingredients listed for the fresh ground paste. Blend until the mixture reaches a coarse-to-fine consistency—smooth enough to mix easily into the meat, but still retaining a bit of texture.

Preparing the Meat Mixture

  • Place the ground lamb in a large mixing bowl.
  • Season with salt, freshly cracked black pepper, and meat masala (or garam masala).
  • Add the prepared fresh ground paste.
  • Using your hands or a wooden spatula, gently mix until everything is evenly combined. Be careful not to overmix—the meat should stay light and loose for juicy kebabs or burgers.
  • Cover the bowl with plastic wrap and let it rest at room temperature until ready to use. (See FAQs & Notes for make-ahead and storage tips.)

Making the Kebabs

  • Preheat your grill (outdoor grill or indoor grill pan) over medium-high heat (see FAQs & Notes for oven option).
  • Divide the meat mixture into equal portions.
  • Lightly oil your hands to prevent sticking.
  • Shape the kebabs: Take each portion and press it firmly along the length of a skewer to form a sausage-like shape. Make sure the meat mixture adheres well to the skewer.
  • Grill the kebabs for about 6–7 minutes per side, until the meat is cooked through and nicely charred to a golden brown.
  • Rest the kebabs: Transfer them to a platter, cover loosely with foil, and let rest for 5 minutes to allow the juices to redistribute.
  • Serve: Serve the kebabs on the skewers, or slide them off before serving with naan, chutney, or your favorite sides.

Making the Burgers

  • Preheat the grill (outdoor grill or indoor grill pan over medium-high heat) and brush or spray it with cooking oil. (see FAQs & Notes for oven option).
  • Divide the meat mixture into equal portions.
  • Lightly oil your hands to prevent sticking, then shape each portion into a patty about ½ inch thick and roughly 4 inches in diameter.
  • Grill the patties on the preheated grill for 5–6 minutes on the first side, until the bottoms are no longer translucent and have good grill marks.
  • Flip and cook the other side for another 5–6 minutes, or until the patties are cooked through.
  • Optional: Add a slice of Havarti, cheddar, or your preferred cheese on top of each patty during the last minute of cooking. At the same time, toast the burger buns on the grill.
  • Check for doneness: The internal temperature of the patties should reach 160°F (71°C) when measured with a meat thermometer.
  • Transfer the patties to a platter, cover loosely with foil, and let them rest for 2–3 minutes to allow the juices to redistribute.
  • Assemble the burgers: Spread the bottom buns with condiments—cilantro-mint chutney, ketchup, or Maggi Hot & Sweet Sauce. Add the rested patties, then top with tomato, cucumber, onion slices, lettuce, and the top bun.

Recipe FAQ’s and Notes

Make-Ahead Tip

You can prepare the spiced lamb mixture up to 1 day in advance. After mixing, cover the bowl tightly with plastic wrap and refrigerate. Let it sit at room temperature for about 20–30 minutes before shaping and grilling, so it’s easier to handle and cooks more evenly.

You can also freeze the uncooked meat mixture: shape it into a flat disc, wrap tightly in plastic wrap, and place in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge before using.

Freezer Tip (Cooked Kebabs or Burgers)

Grilled kebabs or burger patties freeze beautifully. Once cooled completely, wrap each one tightly in aluminum foil and place in a freezer-safe bag or airtight container. They’ll keep well for up to 3 months. To reheat, thaw overnight in the fridge and warm in a skillet or oven until heated through.

Grill or Oven

These kebabs or patties can be grilled outdoors, cooked on a grill pan indoors, or roasted in the oven at 425°F until browned and cooked through (about 20–25 minutes, flipping halfway).

No Skewers?

No problem. Simply shape the kebabs into smaller logs and grill or roast them as-is.

Recipe Variations

Meat Substitutes: This recipe works great with ground chicken, beef, pork or a mix of meats. Just avoid using lean meat blends—some fat keeps the kebabs juicy.

Vegetarian Version: Use mashed chickpeas and potatoes seasoned the same way. The mixture can be shaped into patties or logs, but please note that it won’t hold on skewers.
