A Favorite Breakfast

If I had to pick a favorite breakfast indulgence, Indian Vegetable Puffs, or Veg Pattice, as we called them growing up in Pune, would win hands down! These Indian-style savory puff pastry turnovers aren’t just a treat; they’re a family tradition. Growing up in Pune, my sister, brother, and I would look forward to our Sunday family ritual: fresh Veg Pattice from Santosh Bakery. Dad would swing by on his way back from his morning walk and bring home at least a dozen of their out-of-this-world, perfectly crisp, golden puff pastry turnovers, packed with a spicy vegetable filling.

Even now, when we visit Pune, we don’t miss our Sunday morning pattice ritual. I wish they’d open a branch here in the Bay Area! Until then, I make my own version at home.

Inspired by the flavors of those beloved bakery Veg Pattice, my Lighter Indian Vegetable Puffs bring that same crisp, flaky goodness with a modern, slightly healthier twist.

A Lighter Filling

The filling is where all the magic happens. The filling starts with boiled potatoes, mashed and sautéed in a flavorful ginger-garlic-onion-tomato masala sauce along with peas and carrots. If I have green beans or corn in my freezer, those go in as well. I love a good veggie loaded filling!

To give it a lighter touch without compromising on taste, I add frozen riced cauliflower. It blends seamlessly with the mashed potatoes. It’s my little trick to sneak in extra veggies in the filling, making it healthier without compromising on flavor! It adds texture while reducing the overall carb content, making these puffs a slightly healthier indulgence.

Whether enjoyed for breakfast, as an afternoon snack, or as a party appetizer, these Lighter Indian Vegetable Puffs always hit the spot.

A Store-Bought Shortcut

One of the best things about this recipe is how effortless it is, thanks to store-bought frozen puff pastry. It eliminates the need for making pastry from scratch, making it perfect for even a novice home cook. With a little prep ahead, you can have bakery-style Indian Vegetable Puffs fresh from the oven with minimal effort. The key is to let the frozen pastry thaw just enough to be pliable but still cold, ensuring it bakes up light and flaky.

Depending on what type of frozen puff pastry I find, I shape my puffs accordingly. If I get pre-cut puff pastry squares, I fold them diagonally to create neat triangular turnovers.

When using puff pastry sheets, I cut them into thirds along the width, then halve each strip. After filling, I fold the rectangles over along their length, resulting in crisp, golden rectangular puffs. No matter the shape, they’re just as delicious!

A Versatile Treat

My Lighter Indian Vegetable Puffs aren’t just great for breakfast or snack—they’re perfect for entertaining or meal prepping. I often make the filling in advance, and sometimes I even assemble the pastries ahead of time, storing them unbaked in the refrigerator or freezer. When I’m ready to serve, I simply pop them onto a baking sheet while the oven preheats and bake them to golden, crispy perfection.

While I love the classic lightened up veggie filling, I’ve also experimented with some other fantastic alternatives like chicken kheema, paneer tikka, masala paneer filling or even leftover chicken curry. No matter the filling, these flaky, savory parcels are always a hit.

Lighter Indian Vegetable Puffs

Description

Savory puff pastry turnovers with a lighter spiced potato, riced cauliflower & vegetable filling—great for breakfast or snacks


Ingredients

The Filling (see Variations)

  • 1 large baking potato (Idaho or Russet potato recommended), cut in quarters, boiled and peeled
  • 2 tbsp neutral cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp turmeric
  • 1/4 tsp asafetida
  • 1 small onion, diced
  • salt, to taste
  • 12 garlic cloves, smashed, peeled and minced
  • 1/2 inch piece of ginger, peeled and minced
  • 1/2 tsp red chili powder (optional – use less for milder heat)
  • 1/2 tsp garam masala
  • 1 medium tomato, diced
  • 1/4 cup of peas, thawed if using frozen (optional)
  • 1 medium carrot, finely chopped or shredded (optional)
  • 1 cup of frozen riced cauliflower, thawed (see FAQs & Notes))
  • fresh cilantro/coriander, finely chopped

For the Puffs

  • 1 pkt (2 sheets) of frozen puff pastry

Instructions

Making the Filling

  • Mash the boiled potatoes slightly, leaving them a little chunky.
  • Heat oil in a skillet or a sauté pan. Add mustard and cumin seeds along with the turmeric and asafetida.
  • When the seeds splutter and the spices froth, add the onion with the garlic and ginger. Sauté for a few of minutes till the onion is translucent.
  • Add the chopped tomatoes along with peas and carrots , if using and mix well. Season with salt, red chili powder and garam masala. Cook for 8-10 minutes on medium low heat, stirring occasionally, till oil separates out and the vegetables are soft. 
  • Then add the mashed potatoes, mix well. Stir in the thawed frozen riced cauliflower and adjust seasonings. Add a little water, if its too thick and simmer covered for about 5 minutes.
  • Take it off the heat and mix in the cilantro.
  • Let it cool down to room temperature, for about 20-30 minutes.

Assembling the Puffs (see FAQs & Notes)

Using Readymade Puff Pastry Squares

  • Lay the thawed puff pastry square on a lightly floured surface and place about 2 tbsp of the cooled filling in the center. 
  • Fold the filled puff pastry squares along the diagonal and into a triangular shaped pastry, pressing firmly (using a fork if needed) making sure its completely sealed. You can use a pastry brush and water to seal the edges, if needed.

Using Puff Pastry Sheet

  • Lay the puff pastry sheet onto a lightly floured surface. 
  • Divide into 6 rectangular pieces, cutting along the 2 folds to make 3 long strips and then cutting each strip in half. Place about 2 tbsp of the filling in the center of one side of each rectangular piece. 
  • Fold the half without the filling over the half with the filling, pressing firmly to ensure it is completely sealed (using a fork if needed). You can use a pastry brush and water to seal the edges, if needed.

Baking the Puffs

  • Preheat the oven to 400°F (200 °C). 
  • Transfer the assembles puffs to a parchment paper lined baking sheet, making sure they are at least 1 inch apart from each other.
  • Bake in the oven for about 15-20 minutes, until the puffs are golden brown. Make sure to place the baking sheet on the center rack of the oven.
  • Serve Immediately or at room temperature with ketchup or your favorite condiment.

Recipe FAQ’s and Notes

Got fresh cauliflower?

I developed the recipe with frozen cauliflower that has been blanched and then frozen. But if you are using fresh cauliflower, boil 3-4 large florets (about 1 cup)  along with the potatoes and mash them as well along with the potatoes

What about refrigerated rice cauliflower?

If you find refrigerated riced cauliflower, you can add it along with the tomatoes, so that it can get a chance to cook.

Puff pastry recommendations

You can also use Pepperidge Farm or Trader Joe’s puff pastry sheets. Thaw them per the package instructions and use them in the recipe.

If you can find puff pastry squares, they are even easier! You can find Kawan squares in the Indian grocery stores.

Refrigerate or Make Ahead of Time

You can refrigerate the assembled puffs for up to 2 days, if you want to make it ahead of time. Make sure to separate them with parchment paper, so that they don’t stick to each other.

Freeze and Ready to Bake upto 3 Months

You can freeze the assembled puffs for up to 3 months. Bake frozen, without thawing. You might need to add a 5-7 minutes more of baking time.

Recipe Variations

Stir in crumbled paneer or tofu into the spiced vegetable filling for a protein boost.

Chicken kheema, paneer tikka, masala paneer filling or even leftover chicken curry are some other fantastic alternatives for the filling.
