This past holiday season, I set out on a mission to create a warm, hearty dish for the holiday brunch I was hosting for 30 people. I wanted something that was easy to make, could be prepped-ahead, was stress-free and satisfied a crowd while showcasing all the best breakfast flavors. Introducing: Masala Egg Casserole. It’s my spicy, desi version of a classic breakfast casserole, inspired by the flavors of Indian Anda/Egg Bhurji. It checks all the boxes: eggs, potatoes, meat, cheese, and vibrant veggies. This comforting bake has quickly become both, a brunch staple and a family favorite. It’s perfect for everything from holiday gatherings to lazy weekend mornings.

A Crowd Pleaser with a Desi Twist
For my holiday brunch, I initially tried the Pioneer Woman’s casserole recipe, making a few adjustments to suit our preferences. I swapped the sausage for broccoli, served sausage patties on the side, and replaced the peppers with diced tomatoes. To accommodate dietary restrictions, I even made a small eggless version.
The casserole was a showstopper, but I couldn’t resist giving it a bold Indian makeover for Christmas Day brunch. Inspired by anda/egg bhurji, the Indian-style scrambled eggs, I infused the casserole with Egg Curry Masala, onions, tomatoes, Thai green chilies, and fresh cilantro. These ingredients worked beautifully with the crispy tater tots and gooey cheese, resulting in a spicy, festive dish that my family devoured.
From Holiday Hit to Weekend Favorite
What started as a holiday experiment quickly became a regular feature on our weekend brunch table. With eggs, cream, cheese, spinach, and a bag of frozen tater tots on hand and the Egg Curry Masala in the spice cabinet, the dish comes together effortlessly.
Here’s how I put it together:
The Base: A layer of frozen tater tots goes into a baking dish, followed by chopped spinach, onions, tomatoes, and green chilies.
The Eggs: I combined eggs, cream, Egg Curry Masala, salt, and pepper to create a spiced egg mixture.
Assemble and Bake: After pouring the egg mixture over the veggies and tots, I add a generous layer of grated cheese. The casserole bakes at 350°F in under an hour, emerging golden and bubbly.

Flexible Potatoes: No tater tots? Substitute with frozen breakfast potatoes, sweet potatoes, shredded or hash browns patties for a similar result.
Customize Your Veggies: Spinach, onions, and tomatoes are my go-to, but I often make it with breakfast sausage and/or broccoli (my daughter’s favorite). Mushrooms or bell peppers work well too.
Boost the Protein: Add in some fully cooked breakfast sausage or top with crispy bacon. Smoked salmon works very well too!
Make It Ahead: Assemble the casserole the night before and refrigerate it. Simply bake it fresh the next morning for an easy, no-stress breakfast.
Serving Suggestions: You can serve it straight up topped with avocado slices or along side toast with your favorite hot sauce.

1cup grated melting cheese (ex. cheedar, monterey jack or colby jack)
4–5 springs of cilantro/coriander leaves, minced, for garnishing
1–2 scallions or green onions, finely sliced, for garnishing
Instructions
Preheat the oven to 350 deg F (175 °C).
Transfer the frozen tater tots or any other variety of potatoes you are using to a baking dish.
Top with onions, tomatoes, spinach, green chilies (if using) and any other veggies/meats you are using.
In a mixing bowl or a glass mixing cup, whisk together cream, eggs, salt, pepper and Egg Curry Masala and pour over into the baking dish.
Top with an even layer of the grated cheese (see FAQs & Notes).
Bake in the oven covered for 25 mins and then uncovered for another 25 mins till the top layer of the cheese turns slightly golden brown and is bubbling.
Remove the baking dish out of the oven and garnish with cilantro and green onions. Cut into squares and serve hot along the side of bread for breakfast or simple mixed greens salad for brunch.

Don't have spinach?
Substitute with other leafy greens like kale, Swiss or rainbow chard, etc.
Where to find Egg Curry Masala?
Egg Curry Masala is easily available at local Indian grocery stores or online on Amazon.
If you can’t find it, you can substitute with your favorite garam masala.
Pro Tip: Prep Ahead
After layering with the grated cheese, you can cover the baking dish with a plastic wrap and store in the refrigerator overnight. Preheat the oven in the morning when ready to bake and bake in the oven as per the rest of the recipe.
Recipe Variations
You can also use frozen hash browns (shredded/diced/patties). Alternatively you can used boiled or roasted potatoes/sweet potatoes as well.
You can use any veggies like peppers, broccoli, mushrooms etc. that you may have on hand.
