I’m making the most of warm summer weather, cooking outdoors either on the grill or in the pizza oven. One of my favorite things to throw in the fire? A mushroom pizza—but with a twist. This Indian-inspired Masala Mushroom Pizza brings together my two loves: bold Indian flavors and mushrooms. The deep umami of mushrooms, the warmth of garam masala, fresh arugula with a peppery bite and that final hit of heat from the chili oil come together in a way that feels both familiar and new.
I keep the topping simple and satisfying with white button mushrooms sautéed in a mixture of onions and garlic spiced with cumin seeds and garam masala. Once baked, the pizza gets topped with a handful of fresh arugula and a spicy chili-infused extra virgin oil drizzle.
The result is earthy, spicy, peppery, and just a little indulgent. Basically, everything I want in a slice.

I take a shortcut and use store-bought pizza dough from my neighborhood grocery store. You can absolutely make your own or grab some from your local pizzeria. The flavor is all in the spiced mushrooms, cheese and finishings, so it’s okay to keep the base easy!
I stretch it out thin and cook it directly on the stone in my pizza oven. You get those gorgeous leopard spots on the bottom and bubbly edges on top.
If you’re using a regular oven, a preheated pizza stone or steel works beautifully. Just crank up the heat as high as it’ll go and keep an eye on it.

Technically, this is a white pizza since there’s no sauce involved. However, if you’re craving something saucier, a swipe of ricotta or a mild white sauce for the base could work, but I promise you won’t miss it. Want to switch up the mushrooms? You could—but honestly, white button mushrooms are perfect here: affordable, accessible, and they soak up the masala like a dream.
Fresh arugula adds a peppery bite that balances the richness of the mushrooms, but if you’re not into arugula, try baby spinach, basil, or even microgreens. No chili oil? A drizzle of garlic-infused olive oil or even a spoonful of chili crisp works beautifully as a finishing touch.

Heat oil in a sauté pan over medium heat and add in the cumin seeds followed by the onions.
Sprinkle some salt to help the onions sweat and sauté them for 1-2 minutes till they turn soft.
Add in the chopped garlic and sauté for another minute to cook out its raw flavor.
Add the garam masala and give it a quick stir, allowing the spice mix to bloom in the onion-garlic mixture.
Stir in the mushrooms and add the water.
Cook uncovered over medium heat for 3-4 minutes till the moisture is completely absorbed and the mushrooms are cooked.
Turn the heat off and stir in the sliced green onions and chopped cilantro/coriander leaves.
Set aside until ready to use.
Making the Pizza
Preheat your pizza oven according to the manufacturer’s instructions (see FAQs & Notes for oven baking alternative method).
Generously flour your work surface and pizza peel.
Place the dough on the floured surface and stretch it by pressing outward from the center, then working around the edges.
Pick up the dough and gently pinch around the edge, letting gravity help shape it into a 9–10 inch circle.
Transfer the stretched dough onto the floured pizza peel.
Spread a light, even layer of the prepared Masala Mushrooms over the base, leaving a ½-inch border.
Finish with a generous layer of the shredded cheese.
Bake in the preheated pizza oven (or in a regular oven on a pizza stone) until the crust is golden brown and the cheese is bubbling.
If using a pizza oven, rotate the pizza with a turning peel for even cooking.
Remove from the oven and let rest for 1 minute.
Serving the Pizza
Top with arugula leaves and a drizzle of the spicy olive oil.

If you’re using store-bought dough, let it rest at room temperature for 30–60 minutes before stretching—it’ll be easier to handle and bake up better.
No pizza oven?
If you don’t have a pizza oven, this recipe works beautifully in a regular oven with a pizza stone or steel.
Preheat the oven to 500°F (260°C) with the stone inside for at least 45 minutes before baking. Bake the pizza directly on the hot stone for 6–8 minutes, or until the crust is golden and the cheese is bubbling.
Leftovers Storage & Reheating
Store leftover slices in an airtight container or tightly wrapped in an aluminum foil, in the refrigerator for up to 3 days. To reheat, place the slices on a skillet over medium heat and cover loosely with a lid to help the cheese melt while keeping the crust crisp—about 3–4 minutes. You can also reheat in a 375°F oven or toaster oven for 5–7 minutes. Avoid the microwave if you want to preserve that crispy crust!
Want to freeze leftovers? Wrap individual slices tightly in foil and place them in a freezer-safe bag. Reheat straight from frozen in a 400°F oven for about 10–12 minutes.

Mushroom options: While white button mushrooms are perfect for soaking up the masala, you can also use cremini or portobello for a deeper, meatier flavor.
