Eggs, I think, are synonymous with Easter and are also symbolic of the spring season, signaling fresh starts and new beginnings. And of course, no brunch is complete without an egg dish on the table! So for my Easter holiday brunch this year, I’m going with something festive and colorful: Mini Masala Frittatas.
These are a mini take on classic Italian-style open-faced omelets—but with an Indian spin! Baked in muffin tins and filled to the brim with vibrant vegetables, cheddar, and a hit of warm spices, they puff up beautifully in the oven and come out golden, flavorful, and absolutely stunning.

A Brunch Favorite with a Twist
One of my favorite things to do in the kitchen is bring Indian flavors to unexpected places—especially with global classics, like these Italian frittatas. I usually toss together a meaty, veggie-loaded one for weekend brunch, but this time I thought—why not spice things up?
My inspiration came from two of my go-to egg recipes—Anda Bhurji and the Masala Egg Casserole. Both these family brunch favorites are packed with bold, savory flavors that work beautifully with eggs.
Masala Magic
Adding Indian spices to this otherwise Italian-inspired dish gives it a whole new personality. The garam masala brings warmth and depth, while the chili powder adds just the right amount of heat. You can keep the base simple—with just cheese and the spiced egg mixture—and let the bold flavors of the masala do all the heavy lifting.
I love to load them with raw colorful veggies—think sweet mini bell peppers, red onions, tomatoes, spinach, broccoli. You can play around with whatever seasonal vegetables you have on hand.
The result? Soft, savory frittatas with golden edges and pockets of flavor in every bite. I also love tossing in a handful of chopped cilantro at the end for a fresh, herby finish.

I love how frittatas are endlessly customizable, and making them mini just adds to the fun (and the convenience). You can switch up the veggies—try other ones like mushroom, chopped kale or seasonal ones like asparagus or zucchini—or play around with different cheeses like feta, goat, mozzarella, provolone, asiago, gruyere, fontina or any other kind that are soft and melt easily. I often make a broccoli and cheddar version just for my daughter. You can even add finely chopped pancetta, bacon bits, or crumbled sausage if you’re feeling meaty.
You can pack them in lunchboxes, bring them along for picnics, or set them out on a springtime brunch spread. They freeze well and reheat easily, making them perfect for grab-and-go breakfasts during the week. I even like to sandwich them between toasted English muffins with a swipe of chutney, ketchup, or a slice of cheese. Ingredients
Scale
about 2 cups of finely chopped vegetables (combination of broccoli, different bell peppers, baby spinach, tomatoes, onions, etc.) (see Variations)
1/2 cup freshly grated cheddar (see Variations)
Nonstick cooking oil spray
Custard
12 large eggs
3/4 cup whole milk
1 tsp garam masala
salt, to taste
fresh cracked black pepper, to taste
Instructions
Preheat the oven to 375 degrees F.
Spray muffin tins with nonstick cooking oil spray. (See Variations)
Fill them up 3/4 way through with the diced veggies.
Top with shredded or crumbled cheese.
Prepare the custard by whisking the eggs, milk, garam masala and salt in a liquid measuring cup with a spout and mix well.
Pour the custard into the prepared muffin cups, filling them almost to the top.
Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes.
Take the muffin pans out of the oven and let it cool for 5 minutes.
Using a rubber spatula, loosen the frittatas from the muffin cups and place them onto a platter.
Serve warm or at room temperature.

Recipe Variations
You can switch up the veggies—try other ones like mushroom, chopped kale or seasonal ones like asparagus or zucchini.
You can even add finely chopped pancetta, bacon bits, or crumbled sausage if you’re feeling meaty.
Play around with different cheeses like feta, goat, mozzarella, provolone, asiago, gruyere, fontina or any other kind that are soft and melt easily.
Instead of muffin pans, you can use two 9-inch round or a 9×13 rectangular baking dish to make the frittata.
Bake at the same temperature for 30 minutes or until the knife comes out clean when inserted in the center and the top is golden brown.
