Mom’s visiting and it seems like this trip, she’s got the blogger bug from me! I’m excited to be sharing one of her recent creations, that she whipped up right here, in my kitchen – Mustard-spiced Red Pepper Raita. Blanched slices of red bell pepper are folded into the mustard-spiced yogurt, creating a symphony of flavors. The sharp, pungent kick from the mustard seeds, the heat from the chilies, the sweetness of the peppers, and the creamy coolness of the yogurt—each bite is a burst of complexity. We had it on the side of a warm mushroom and wild rice pilaf, and it was a match made in culinary heaven.

Now, I make all kinds of raitas, but I was blown away when my mom introduced me to her Mustard-spiced Red Pepper Raita for dinner one night. It’s one of her more recent creations, but it already feels like a classic in my kitchen. Both are wonderful in their own way, but if you’re looking for a raita that feels lighter and sweeter, the red pepper version is your answer.

Mustard-Spiced Red Pepper Raita

Red pepper raita with blanched peppers in a mustard and green chili-spiced tangy yogurt dressing.


Ingredients

Units Scale
  • 1 large red pepper (see Variations)

Yogurt Dressing

  • 1 cup unsweetened, plain Greek yogurt
  • 1 small Thai or birds-eye green chili (skip or use jalapeño or red pepper flakes for milder heat)
  • a handful of cilantro leaves with tender parts of stem
  • 1 tbsp split yellow grain mustard seeds (see FAQs & Notes)
  • salt, to taste
  • 1/2 tsp sugar

Instructions

  • Cut the pepper into thin rings.
  • Cut across the rings at the diagonal to make slices out of it.
  • Bring water to a boil in a small sauce pan and blanch the peppers for about 3-4 minutes, till they are slightly cooked, but firm and crunchy to bite. Drain and transfer to a bowl.
  • Combine all the ingredients for the Yogurt Dressing in a food processor or blender and process until smooth.
  • Pour it over the blanched peppers. Mix well and refrigerate until serving.

Combine all the ingredients for the Yogurt Dressing in a food processor or blender and process until smooth.

Pour it over the blanched peppers. Mix well and refrigerate until serving.

What are split mustard seeds?

Split mustard seeds, called Rai Kuria or Rai Dal, are mustard seeds that have had their skin removed and been roughly ground.

They are a key ingredient in Indian pickles and have a pungent, slightly bitter taste with a fresh aroma.

You can also use whole yellow mustard seeds.

Can't find split yellow mustard seeds?

Simply substitute with ½ tbsp of regular yellow mustard or other kinds like Dijon or stoneground mustard from the jars.

Recipe Variations

Try the recipe with orange or mini colorful bell peppers for a change.
