In the ever-changing landscape of food trends, there’s one particular trend that seems to have become quite a revolution: overnight oats for breakfast! It’s one of those no-cook, zero-effort, fuss-free recipes that offers a quick, easy, delicious, and nutritious meal that’s perfect for on-the-go enjoyment. I’m certainly addicted to it and have even come up with an Indian twist. Introducing my signature concoction: Overnight Oats & Chia Seeds in Masala Doodh.

The concept of overnight oats is simple and straightforward. There’s hardly any effort required on your part; the refrigerator does all the work, if any! Simply mix rolled oats with your preferred milk and let them soak it all up overnight, in the refrigerator. They soften and expand to create a luscious and satisfying pudding-like texture by morning.

The recipe is incredibly versatile! Simply infuse the milk with your favorite flavors, sweeten it to your liking. Of course, you can top it off with fruits and/or nuts for a personalized touch. You can also throw some chia or flax seeds to the mix to bump up its nutritional value and create a slightly gelatinous texture as they swell up in the liquid.

The beauty of overnight oats lies not only in its simplicity and convenience but also in the endless possibilities for flavor combinations. Aside from using your preferred choice of milk, whether dairy or dairy-free, and a sweetener that works for you, you can infuse it with your favorite flavors like vanilla, cinnamon, and more!

As I jumped on the bandwagon, I played around with around with a bunch of different flavors of overnight oats. After trying a variety of combinations of flavors, my formula for making overnight oats remains the same. Here’s my ultimate equation for making the perfect overnight oats:

⅓ cup liquid


sweetener of choice (optional)


½-1 tsp of flavoring (optional)


½ cup rolled oats


1 tbsp chia/flax seeds (optional)


fruit/nut toppings (optional)

Overnight Oats & Chia Seeds in Masala Doodh

An Indian spin on the beloved no-cook, effortless breakfast with oats and chia seeds in masala milk/doodh


Units Scale

Soaking Mixture

  • 1/3 cup of milk of choice (plain low fat/unsweetened almond/soy/coconut milk)
  • sweetener of choice, to taste (sugar/honey/maple syrup/zero calorie sweetener)
  • 1/21 tsp doodh masala (see FAQs & Notes + Variations)
  • 1/2 cup rolled oats
  • 1 tbsp chia seeds (optional)


  • 12 tbsp of roasted, unsalted nuts (optional) (almonds/ pistachios/cashews)
  • 1/4 cup of fresh fruit (optional) (banana slices/mango cubes)


  • In an airtight glass container, combine the milk, sweetener and the doodh masala.
  • Stir in the oats and the chia seeds, if using. 
  • Cover and refrigerate for about 8 hours or overnight (see FAQs & Notes for more information).
  • Top with toasted nuts and fresh fruit, just before serving or consuming.

Don't have time to make your own Doodh Masala?

If you’re feeling lazy or don’t have time to make your own Doodh Masala, you can absolutely buy the readymade one. Its available in the Indian grocery stores or on Amazon!

What if I forget to grab the overnight oats out of the refrigerator?

Don’t worry! Overnight oats will stay well in the refrigerator for 48 – 72 hours.

Recipe Variations

Overnight Oats in Indian Cold Coffee

1/2 cup rolled oats in 1/3 cup plain low fat milk, 1-2 tsp sugar, 1 tsp instant coffee. Topped with toasted slivered almonds and chocolate covered coffee beans.

Chai Spiced Overnight Oats

1/2 cup rolled oats and 1 tbsp chia seeds in 1/3 cup sweetened vanilla soy milk, 1/2 tsp chai spice. Topped with strawberries and toasted slivered almonds.


Cardamom-scented Overnight Oats

1/2 cup rolled oats and 1 tbsp chia seeds in 1/3 cup sweetened vanilla almond milk, 1/4-1/2 tsp ground cardamom. Topped with fresh diced mango and toasted slivered almonds.


Falooda-inspired Overnight Oats in Rose Milk

1/2 cup rolled oats and 1 tbsp chia seeds in 1/3 cup plain low fat milk, 1-2 tbsp rose syrup. Topped with toasted unsalted pistachios.
