A Sip of Heaven

Every now and then, inspiration strikes from unfamiliar or the most familiar places! The last time, it was my visit to New Zealand that inspired me to craft my Travel-Inspired Orange Latte. This time, it came from my ever-popular fresh baked goods product line— Cardamom, Pistachio, and Rose Loaf Cake. I wanted to take those beloved flavors and transform them into something cozy and drinkable. Introducing my newest signature concoction, the Pistachio, Cardamom & Rose Latte. It’s a dreamy, aromatic pick-me-up that’s as indulgent as it is festive—perfect for the holiday season or anytime you need a cozy sip.

With its rich nutty and floral flavors, this latte feels like a luxurious treat to savor during the cold, winter days or whenever you need a little boost. Whether you’re starting your morning with a little indulgence or curling up in the evening for a quiet moment, it’s the kind of drink that makes any moment feel even more special. It’s one of those drinks that makes you slow down and appreciate the warmth and comfort, especially during this time of year.

Behind the Scenes of Your Sip

My Pistachio, Cardamom & Rose Latte begins with a fragrant mix of finely ground pistachios. This ensures the pistachio flavor is prominent and blends seamlessly into the latte. Then comes the aromatic ground cardamom and a splash of rose water. The three elements create a flavor base that feels both nostalgic and decadent. It’s an Indian spin on the classic beverage by infusing it with pistachios, cardamom and rose. These are the essential flavors of the traditional Indian milk-based dessert, rabdi or rabri. The nuttiness of the pistachios adds richness, while the cardamom brings a hint of warmth and the rose water adds a delicate floral note that ties everything together.

The Perfect Coffee Pairing

To complement these flavors, I used a shot of Monsoon Malabar—a bold, monsoon-aged coffee from India’s Malabar Coast. Its unique aging process gives it a heavy body and earthy aroma, making it the perfect match for the rich and floral flavors of this latte. It’s my favorite coffee from my hometown, Pune, and it pairs beautifully with the Rabdi-inspired flavors in this latte. If you’re in the U.S., you can find Monsoon Malabar beans at Portorico Coffee Co. (NYC) or Kaveri Coffee in Berkeley, CA, both of which ship nationwide. If you can’t find Monsoon Malabar locally, don’t worry—any strong, full-bodied coffee will work well in this recipe.

A Sweet Twist to Try

If you happen to have rose syrup on hand, it makes a lovely swap for the rose water, bringing a sweeter, more floral note to the latte. Even a small splash deepens the rosy flavor and gives the drink a gorgeous dusky rose hue that’s just as beautiful to look at as it is to sip.

The pistachio and cardamom still take center stage, with the syrup adding a gentle, dessert-like finish.

The Finishing Touch

Once the flavored espresso shot is ready, it’s topped with hot, frothy milk. This step transforms the latte into a creamy, indulgent delight. The finishing touch? A sprinkle of chopped raw pistachios and crushed rose petals. Not only do they add a pop of color, but they also give the drink a little extra texture and visual appeal.

A luxurious latte with warm, nutty and floral flavors—perfect for a pick-me-up during the festive season or any time of year.


Ingredients

Units Scale
  • 1 tbsp fine ground raw pistachios (see FAQs & Notes)
  • 1/81/4 tsp ground cardamom (see FAQs & Notes)
  • 1/21 tsp rose water (see FAQs & Notes + Variations)
  • 1 single shot of espresso
  • 68 oz. milk of choice (see Variations)
  • 23 raw pistachios, chopped, for garnishing
  • dried rose petals, crushed, for garnishing
  • sweetener of choice, if desired

Instructions

  • Prep the ground coffee for espresso, if needed, as per the requirements of your coffee machine.
  • Steam milk to create a creamy micro foam, leaving a light layer of foam on top for the perfect latte texture.
  • Add the fine ground raw pistachios, ground cardamom and rose water to the latte cup.
  • Brew the espresso and pour the shot in the latte cup, over the nut and spice mixture. 
  • Finish off with steamed milk and top with the micro foam. 
  • Garnish with chopped pistachios and crushed dried rose petals.
  • Stir in sweetener of choice, if desired and enjoy warm.

Recipe FAQ’s and Notes

How to prepare fine ground raw pistachios?

Transfer ¼ cup raw pistachios to coffee grinder, processing them to a fine powder.

Alternatively, you can use readily available pistachio flour.

This step ensures the pistachio flavor is prominent and blends seamlessly into the latte.

Got whole green cardamom in pods?

You can take the seeds out of the pods and crush them to add to the latte.

What's a good substitute for rose water?

You can use about 1/4 tsp of rose extract or 1 tsp of rose syrup

Recipe Variations

Make it a Vegan Latte by using any dairy-free milk of your choice like plain Oat milk, Soy milk or a nutty Almond/Cashew milk

Try fine blanched almond flour in place of fine ground pistachios and then substitute with orange blossom water for rose water and ground nutmeg for ground cardamom. Almond, nutmeg and orange flavors pair very well (I have a recipe for a scrumptious cake with this flavor combo) and with these flavors, you’ll create a slight variation of my Travel-inspired Orange Latte!

Rose Syrup Twist: Swap the rose water for 1 tsp – 1 tbsp of rose syrup (available in Indian grocery stores or Amazon) depending on your sweetness preference.

It adds a richer floral flavor and gives the latte a gorgeous dusky rose color, while keeping the pistachio and cardamom flavors front and center.
