Not Your Usual Crumble Bars

Not all crumble bars are filled with fruit. Instead of the typical fruit or jam fillings, my Puran Crumble Bars bars are layered with puran. It’s a traditional sweetened split-pea filling gently spiced with cardamom and nutmeg and enriched with jaggery for a deeper, more complex sweetness. The crumble is made with atta, the fine Indian whole wheat flour, along with ghee and chopped almonds, creating a nutty whole-grain base and topping that bakes into a tender yet structured bite.

Naturally eggless and sweetened with unrefined sugar, these bars are balanced and comforting. They are rich, without being overly sweet, and just as fitting alongside morning coffee or afternoon chai as they are on a festive table.

Puran Poli to Crumble Bars

My Puran Crumble Bars are an ode to puran poli, the beloved Maharashtrian sweet flatbread traditionally prepared for Holi, the festival of colors, and other special occasions. The puran filling is made by slowly cooking and mashing chana dal or split Bengal gram. It is then sweetened with jaggery and warming spices like cardamom and nutmeg. Instead of being stuffed inside soft atta dough and rolled into flatbreads, that same filling becomes the centerpiece in my Puran Crubme Bars. It gets layered between a wholesome crumble made with Indian whole wheat flour, jaggery, ghee, chopped raw almonds, cardamom, and nutmeg.

The transformation keeps the essence of puran poli intact, while offering a format that feels approachable, sliceable, and easy to share in a modern kitchen.

Layers of Flavor and Texture

What makes these Puran Crumble Bars different from the usuals are both the filling and the crumble. The puran filling remains true to tradition, made from cooked and mashed split Bengal gram blended with jaggery and fragrant spices.

For the crumble, atta, the finely milled Indian whole wheat flour, provides structure and a subtle nuttiness that echoes the flavor of the flatbread dough used in puran poli. You can find atta easily in Indian grocery stores or online here.

Rolled oats add heartiness and chew, giving the bars substance and balance. Ghee contributes richness and aroma that instantly feels festive, while chopped raw almonds bring crunch and texture contrast. A flax egg (flaxseed meal + water) gently binds the crumble, keeping the recipe eggless while ensuring the layers hold together beautifully.

The beauty of these Puran Crumble Bars lies in the contrast between the layers. Description

Eggless baked bars inspired by Puran Poli, with a warmly spiced sweetened split-pea filling layered between a wholesome, nutty crumble.


Ingredients

For the Puran Filling

  • 1/2 cup split peas/chana dal (Bengal gram; see FAQs & Notes + Variations)
  • 3/4 cup water
  • 1/4 cup jaggery (see FAQs & Notes)
  • 1/4 tsp ground cardamom (see Variations)
  • 1/4 tsp ground nutmeg

For the Flax Egg (see FAQs & Notes)

  • 1 tbsp ground flaxseeds
  • 3 tbsp water

For the Crust Mixture

  • 1 cup atta (see FAQs & Notes + Variations)
  • 1/2 cup ground jaggery (see FAQs & Notes)
  • 1/4 tsp ground cardamom (see Variations)
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup rolled oats
  • 1/2 cup chopped raw almonds (see Variations)
  • 1/2 cup melted ghee

Instructions

Make the Puran Filling

  • Rinse the chana dal under cold tap water and transfer to a stackable insert pan for the Instant Pot or pressure cooker.
  • Add the water and place on a trivet inside the inner pot of the Instant pot filled with about 1 cup of water.
  • Close the Instant Pot’s lid and turn the steam-release valve to the sealing position.
  • Pressure cook on high pressure for 15 minutes.
  • Let the pressure release naturally after cooking is complete (about 13-15 minutes) and then open the lid.
  • Transfer the cooked dal along to a medium mixing bowl and add the ground jaggery. 
  • Using a potato masher, mash the cooked daal, while mixing the jaggery with it well. 
  • Season with ground cardamom and ground nutmeg and combine well.
  • Let the mixture sit on the counter for about 30 minutes and cool down to room temperature. The mixture will thicken as it cools.

Prepare the Flax Egg

  • In a small bowl, mix ground flaxseed with warm water. Let sit 5–10 minutes until thickened and gel-like.

Make the Crust Mixture

  • In a large bowl, whisk together the flour, ground jaggery, cardamom, nutmeg, salt, and baking soda.
  • Stir in the oats and almonds.
  • Add the butter, flax egg and stir until incorporated.

Bake the Bars

  • Place an oven rack in the center of the oven.
  • Preheat the oven to 350°F.
  • Line the bottom and sides of a 9 × 9 x 2-inch glass or metal baking dish with parchment. Brush the parchment with ghee or butter. 
  • Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan.
  • Using a spatula, spread the filing over the crust, leaving a 1/2-inch border around the edge of the pan.
  • Cover the filing with the remaining crust mixture and gently press to flatten.
  • Bake for 30 to 35 minutes, until light golden.
  • Cool for about 1 hour.

What is the sweetened split-pea filling made of?

It’s made by cooking and mashing split Bengal gram (chana dal), then sweetening it with jaggery and flavoring it with cardamom and nutmeg — similar to the filling used in traditional puran poli. If you can’t find chana dal, you can substitute with split yellow peas.

Don't have atta?

You can substitute by combining regular whole wheat flour and all purpose flour for atta. In the above recipe, use 3/4 cup whole wheat flour + 1/4 cup all purpose flour

Jaggery substitutes

Jaggery adds a deeper, caramel-like sweetness and keeps the flavor closer to traditional puran-based desserts.

You can also use loosely packed light or dark brown sugar or coconut palm sugar instead of jaggery.

No flax seeds?

The flax egg binds the crumble without eggs, helping the bars hold their shape while keeping them tender.

You can substitute with 1 large egg or keep it eggless with a chia egg, a small splash of milk or yogurt, or slightly increase the ghee until the crumble holds together when pressed.

  • Chia egg
    Substitute with 1 tablespoon ground chia seeds mixed with 2½ tablespoons water. Let sit 5–10 minutes until gelled. Works very similarly to a flax egg.

  • Milk or yogurt (for non-vegan option)
    Add 1–2 tablespoons milk or plain yogurt just until the crumble holds together when pressed. This keeps the texture tender.

  • Increase ghee quantity
    Add extra 2 – 4 tablespoons of melted ghee to the crumble mixture. Since this is a crumble-style bar, you don’t need a strong binder — just enough to help it hold when sliced.

Storage Info

Store in an airtight container at room temperature for  up to 3 days, or refrigerate for longer freshness, up to a week. Warm slightly before serving for the best texture.

Recipe Variations

Substitute chana dal (Bengal gram) with toor dal (split yellow pigeon peas) to make the Puran Crumble Bars with Gujarati-style filling.

Play with the spices: 

  • Stir a pinch of saffron into the filling for a more traditional festive flavor.
  • Add a pinch of clove in both the filling and the crumble mixture, for a warmer profile.

Brown butter twist
Swap the ghee with browned butter before mixing into the crumble for deeper nuttiness.

Gluten-free version
Substitute the atta with a gluten-free flour blend designed for baking, though texture will vary.

Nut swap
Replace almonds with pistachios or cashews for a different festive feel.

Coconut crumble
Add a few tablespoons of desiccated coconut to the crumble for extra texture and flavor.

Additional Toppings

For toppings, sprinkle some shredded coconut, sesame seeds or a little coarse sugar over the crumble before baking for added texture.

Dessert-style serving
Serve warm with a scoop of vanilla ice cream or crumble over ice cream for a festive plated dessert.
