A Modern Take on A Classic

Who doesn’t love a quick, comforting dish that brings a taste of home? My Roasted Aloo Methi (spiced potatoes with fenugreek leaves) is exactly that—a weeknight-friendly, hands-off version of the stovetop classic. It is my go-to for a quick, cozy dinner when I want maximum flavor with minimal effort.

Roasted Aloo Methi

Baby potatoes are coated in a flavor-packed blend of turmeric, cumin seeds and garam masala. Addition of chopped garlic and dried red chilies gives it an extra punch. They’re then roasted in the oven until golden and crispy. The final touch? Fresh fenugreek leaves (methi), tossed in and roasted just enough to wilt and release their earthy aroma.

From Stovetop to Oven

Growing up, my mom would lovingly stir-fry a batch of this North Indian classic on the stovetop for quick meals. I stuck with that technique for years until cooking school introduced me to roasted rosemary potatoes. Inspired by it, I reimagined Aloo Methi—swapping the stovetop for the oven. It certainly made my busy weeknights a little more free, letting the oven do most of the work. It sounded perfect in theory and turned out even better in reality! The roasted version has its own charm—crispy, caramelized potatoes that make every bite irresistible.

The oven roasting technique for potatoes and also for other vegetables like cauliflower, okra or even eggplant, is simple, effective and delivers consistent results every single time. Roasted vegetables are just as delicious as pan-fried, but with less effort and even more flavor, thanks to the caramelization.

A Winter Superfood

Fenugreek or methi, deserves its moment in the spotlight. This nutrient-dense winter green, commonly found in Indian households, is not only flavorful but also a powerhouse of health benefits. Methi is rich in iron, fiber, and antioxidants, making it a fantastic addition to any meal.

While methi thrives during the cooler months in India, I am thrilled to find fresh bundles at my local farmers market and Indian grocery store here, almost year round. If you can’t find fresh fenugreek, a small amount of dried methi leaves (kasuri methi) can work in a pinch, though nothing quite matches the aroma and texture of the fresh greens.

Pairing Methi with Potatoes

Cooking with seasonal ingredients feels especially rewarding, and methi is no exception. In India, it’s a beloved winter staple, perfectly suited to rich, hearty dishes that satisfy cold-weather cravings, like the Methi Matar Malai, another North Indian favorite. Methi pairs wonderfully with starchy vegetables like potatoes, like in Aloo Methi. The slight bitterness of methi balances out the warmth of the spices and complements the rich, earthy flavor of potatoes, creating a perfect harmony of flavors.

I love using tiny red baby potatoes in this dish. They’re tender, with a subtly sweet and waxy texture that holds up beautifully to roasting. The contrasting color of the red potatoes against the deep green of the methi leaves is visually stunning, making the dish as appealing as it is flavorful. Compared to other potatoes, red potatoes have a firmer, smoother texture and a slightly sweeter taste, which makes them ideal for roasting, giving each bite a perfect balance of crispy edges and creamy interiors. If you can’t find red baby potatoes, you can halve or quarter larger ones. Even other potatoes like Yukon gold or white work well in the recipe.

Serving Ideas

This dish is wonderfully versatile. The charred, golden-brown potatoes lend a depth of flavor that elevates even the simplest meal. This dish feels like a warm hug on a chilly evening, especially when paired with hot rotis or a comforting bowl of daal and rice. You could also pair it with a cooling and vibrant red beets raita.

The leftovers are equally good—try them tucked into a wrap with some chutney or raita for a quick lunch. For an extra twist, transform leftover Roasted Aloo Methi into hearty Aloo Methi Parathas!

Ingredients

  • 1 lb (454 g) red baby potatoes (see FAQs & Notes + Variations)
  • 2 handfuls fresh methi/fenugreek leaves (see Variations)
  • 2 medium cloves of garlic, peeled and chopped
  • 12 dried red chilies or 1/2 tsp crushed red pepper (optional)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • salt, to taste
  • 2 tbsp neutral cooking oil
  • 2 medium green onions, thinly sliced, for garnish (optional)

Instructions

  • Preheat the oven to 400°F (200 °C).
  • Cut the baby potatoes in halve (or in quarters if using larger sized potatoes) and roughly chop the fenugreek leaves after washing them thoroughly. 
  • Set the leaves aside until ready to use.
  • Spread the potatoes on an aluminum foil lined baking sheet and add the chopped garlic, dried red chilies or crushed red pepper, cumin seeds, turmeric, garam masala and salt. Drizzle oil over the ingredients.
  • Toss to combine everything well, ensuring the potatoes are evenly coated with the oil and the seasonings. 
  • Transfer to the preheated oven and roast for 30 minutes (for smaller sized potatoes, roast for 20-25 minutes), tossing them halfway through. 
  • Take the potatoes out of the oven after they are almost cooked and toss in the chopped methi/fenugreek leaves.
  • Transfer to the oven and roast for about 5-10 minutes till the leaves wilt. Make sure the leaves don’t char or burn. 
  • Take the baking sheet out of the oven and give it a final toss.
  • Garnish with sliced green onions, if using.
  • Serve immediately with hot rotis and raita or daal and rice.

Step: 2

Cut the baby potatoes in halve (or in quarters if using larger sized potatoes) and roughly chop the fenugreek leaves after washing them thoroughly. Set the leaves aside until ready to use.

Spread the potatoes on an aluminum foil lined baking sheet and add the chopped garlic, dried red chilies or crushed red pepper, cumin seeds, turmeric, garam masala and salt. Drizzle oil over the ingredients.

Toss to combine everything well, ensuring the potatoes are evenly coated with the oil and the seasonings.

Recipe FAQ’s and Notes

Can't find baby red potatoes?

Use quartered larger sized red potatoes. You can also use other baby potatoes like yellow or white, Yukon golds or purple potatoes.

Can't find fresh fenugreek leaves?

Substitute with 1 tbsp of dried methi leaves (kasuri methi). Increase the roasting time for the potatoes to 35-40 minutes, tossing halfway through and then sprinkle kasuri methi over after taking the roasted potatoes out of the oven. You don’t need to put the potatoes back in the oven as kasuri methi is very delicate and will quickly burn in the high heat.

Recipe Variations

Try the same recipe with large diced sweet potatoes!

Play with other greens like baby spinach or herbs like dill or parsley. Add them similar to fenugreek leaves in the above recipe.
