Everyday Maharashtrian food is simple, quick, healthy and very flavorful. A typical meal includes poli or chapati (wheat bread), bhaji (vegetable), koshimbir (salad), bhaat (rice), and amti or varan (lentil stews). Meals are primarily vegetarian, made with fresh ingredients, minimal oil and often mildly seasoned, showcasing the natural flavors of the produce. But this everyday food doesn’t always have to be humble and modest, right? As much as I adore the wholesome simplicity of traditional Maharashtrian flavors, I couldn’t resist giving one of our staples a bit of a glow-up. The result? A brand new makeover for Flowerchi Bhaji, our beloved spiced cauliflower stir-fry.
Stovetop to Sheet Pan
Growing up, Flowerchi Bhaji was a regular star on our family table. This quick stir-fry involved tossing cauliflower florets in oil seasoned with just a few basic spices in a frying pan or kadhai (wok). It’s cooked, until the cauliflower is al dente, retaining a slight crunch. The stovetop process is not only quick and simple but also intentionally minimalist. With just a touch of seasoning, it allows for the natural flavors of the cauliflower to shine. I remember my mom would occasionally toss in cubed potatoes or stir in green peas if she had them on hand.
However, as much as I loved the stir-fried version, I was inspired to reimagine it using a method I often turn to when I want bold flavors with minimal effort: roasting. Introducing my Roasted Flowerchi Bhaji or Sheet Pan Indian Cauliflower.
Instead of the traditional stovetop preparation, I toss the cauliflower with a raw phodani (a mix of oil and spices without heating the oil) and spread it out on a sheet pan to roast in the oven. The high heat transforms the cauliflower into something magical—sweet, caramelized, smoky and irresistibly crunchy.
Why Roasting works?
Roasting vegetables is a game-changer, especially for busy weeknights. First, it’s incredibly hands-off—after a quick prep, your oven does all the work. This frees you up to attend to other tasks or simply enjoy some downtime.
From a flavor perspective, roasting brings out the natural sweetness in vegetables, thanks to caramelization. For cauliflower, it enhances its nutty and slightly smoky undertones, making it far more flavorful than other cooking techniques. Plus, the golden-brown edges give it an irresistible crunch that’s hard to achieve with other methods.
Versatile Variations
One of my favorite things about this recipe is its adaptability. While the classic roasted cauliflower is delicious on its own, you can easily turn it into a more substantial dish by adding other ingredients. These additions not only enhance the flavor and texture but also make the dish more versatile.
Potatoes: Toss diced potatoes, halved baby potatoes or sliced fingerling potatoes with the cauliflower for a hearty, filling side. The potatoes roast to a crispy perfection alongside the cauliflower.
Bell Peppers: Add diced bell peppers for a pop of color and a slightly sweet contrast to the spiced cauliflower.
Peas or Chickpeas: Frozen peas or drained canned chickpeas can be added during the last 5 minutes of roasting. The peas bring a burst of freshness, while the chickpeas add protein, making this a well-rounded dish.
A Makeover Worth Celebrating
This revamped version retains the nutritional integrity of the original Flowerchi Bhaji. The raw tadka ensures the spices stay vibrant and fresh, while the oven does the heavy lifting to create a dish that’s as beautiful as it is delicious.
The best part? This recipe is endlessly versatile. While I love to serve it with phulka rotis and some zesty kakdichi koshimbir or in a bowl with rice and dal, it’s equally at home as a side dish for Western-style mains or even tossed into a grain bowl for a hearty, plant-based meal.

While its a great shortcut, in my experience, precut cauliflower florets from refrigerated sections of grocery stores end up turning mushy. Use a fresh, whole head of cauliflower and cut into florets. It doesn’t take that much time and effort but the results will be truly awesome!
