Summer is in full swing, and if you’re craving for refreshing cocktails, I’ve got a unique one for you – my Roasted Strawberry Lime Gin Cocktail! We all know and love the classic Gin & Tonic, but this year, I’m elevating it with a fresh new twist. Made with a luscious roasted strawberry sauce, zesty lime juice, herbaceous rose gin, and a splash of tonic water, this creative cocktail is sure to become your new favorite summertime sipper.

Strawberry Season

Living in the Bay Area, we enjoy strawberries almost all year long but in summer, their flavor is exceptionally good! I’ve now been going regularly to our local farmers market every weekend and picking up all the seasonal veggies and fruits, especially strawberries that are at the peak now.

an Internet sensation

Roasted strawberries has been quite an internet sensation and I’ve been following the trend on social media all summer long! Intrigued and inspired by the wonderful recipes with roasted strawberries I came up with a cocktail concoction that used roasted strawberry purée for the base. I found the roasting technique for strawberries to be a great way to get the most out of their sweet-tart flavor; and it also makes for the most amazing purée that has a great depth of color and flavor along with a hint smokiness that comes from roasting the berries.

I like to roast the berries straight up, but depending on their sweetness, you can add granulated or even brown sugar, drizzle a teaspoon of vanilla extract, balsamic or any other fruity vinegar and even stir in herbs like thyme or basil and spices like green cardamom or black pepper! The roasted strawberry purée turns out so good that I know you’re going to want to use the purée as a sauce to drizzle over ice cream or brownies à la mode and even over pancakes, waffles, oatmeal or yogurt for breakfast!

While I used the roasted strawberry purée as a sauce for all of the above, my favorite was without a doubt, the cocktail where I mixed it with some rose gin, lime juice, agave syrup and topped it off with tonic water. It was like summertime in a glass – delicious and so refreshing!

The homemade roasted strawberry sauce is certainly a special ingredient in this cocktail that takes the classic gin and tonic combination to a whole new level. Roasting the strawberries intensifies their natural sweetness and adds a touch of caramelized depth that perfectly complements the botanical notes of the gin. A squeeze of fresh lime juice adds a necessary tang, while agave syrup provides a touch of sweetness to balance the flavors. Top it all off with a bubbly splash of tonic water, and you’ve got a summer sipper that’s both sophisticated and incredibly easy to make.

The roasted strawberry sauce can be made in advance, making this a perfect drink for easy entertaining or when you want something a little different from the usual to sip on without spending too much time or effort. Roasted Strawberry Lime Gin Cocktail

A unique gin-based cocktail made with a sauce of roasted strawberries, rose gin, lime juice, agave syrup and tonic water.


Units Scale

Roasted Strawberry Purée (makes about 1 1/2 cups)

  • 1 pint (about 2 cups) fresh strawberries (see Variations)
  • sugar, if and as needed (see Variations)

For every serving (makes a total of 6-8 cocktails with the prepared purée)

  • 2 oz. (1/4 cup/59 ml) roasted strawberry purée
  • 2 oz. (1/4 cup/59 ml) gin (rose gin recommended) (see Variations)
  • 1 oz. (1/8 cup/29.5 ml) lime juice (about 1/2 a juicy lime)
  • agave nectar, honey or simple syrup, to taste
  • 1 cup ice
  • tonic water or club soda
  • lime slices, for garnish
  • slit strawberries, for garnish


Making the Roasted Strawberry Purée

  • Preheat oven to at 375 °F (190 °C).
  • To make the purée, simply quarter a pint (about 2 cups) of strawberries and transfer them to an ovenproof baking dish or tray.
  • Toss strawberries with sugar, if using.
  • Roast for 25-30 minutes.
  • Cool completely and then purée in a blender/food processor.
  • If you prefer no seeds, you can strain this through a fine mesh sieve, but this is completely optional.
  • Transfer to an air tight glass jar and store in the refrigerator up to 1 week (see FAQs & Notes).

Making the Cocktail

  • Add the roasted strawberry purée, gin, lime juice, agave nectar/honey/simple syrup and ice in a cocktail shaker.
  • Shake well.
  • Pour mixture into glasses and top with tonic water or club soda.
  • Garnish with a slice of lime and slit strawberries on the rim of the cocktail glass. Cheers!

Recipe FAQ’s and Notes

Can you freeze the purée?

Absolutely! You can transfer the purée to an ice tray or an airtight freezer safe container and freeze for up to 3 months.

Recipe Variations

Try roasting other berries like blue or blackberries and use the purée in this cocktail.

In addition to or instead of tossing the strawberries with sugar, you can also use

  • brown sugar,
  • drizzle a teaspoon of vanilla extract,
  • drizzle balsamic or any other fruity vinegar;
  • stir in herbs like thyme or basil;
  • stir in spices like green cardamom seeds or black peppercorns

If you’d like,  you can also use vodka as a substitute for gin.
