A No-Bake Cheesecake, Reimagined

This Rose, Cardamom & Pistachio Greek Yogurt Cheesecake is one of those low-effort desserts that quietly overdelivers. Made with Greek yogurt, a swirl of rose syrup, a whisper of cardamom, and pistachio almond cookies that soften as they chill, it comes together in minutes and lets the refrigerator do the rest of the work. Inspired by a simple Greek yogurt cheesecake idea that’s been circulating widely, this version leans into familiar Indian flavors.

What starts as a simple, no-bake idea turns into something that genuinely tastes like cheesecake, creamy, balanced, and indulgent, yet lighter and not overly sweet. It’s is an easy, no-bake, healthyish treat that sits somewhere between a dessert and a snack.

With its rosy hue and festive finish, it’s just as fitting for Valentine’s Day as it is for any moment that calls for a little something sweet.

From My Feed to My Kitchen

This recipe was inspired by a viral Greek yogurt cheesecake concept I kept seeing across my social media feed. I loved the concept but immediately imagined it with a desi twist: flavors I grew up loving in: rose milk and rose lassi.

Swirling rose syrup into thick Greek yogurt, with a touch of cardamom, and layering in pistachio almond cookies transformed the trend into something that felt personal and familiar. The rosy hue and subtle spice make it especially charming for Valentine’s Day, but it works any time you want a lightly indulgent, elegant dessert.

After letting it chill overnight and tasting it at the 24-hour mark, I was genuinely blown away! The dessert had set into a cohesive, cheesecake-like texture that felt indulgent without being heavy. The rose syrup added just enough floral sweetness to mellow the tanginess of the yogurt, while the cardamom stayed subtle and aromatic. It tasted intentional, balanced, and exactly the kind of dessert I reach for, not too sweet, but deeply satisfying.

Ingredients That Make It Special

The base of this dessert is nonfat Greek yogurt, which gives it structure and creaminess while keeping it high in protein and slightly more wholesome. After chilling, it truly mimics the texture of a soft-set cheesecake, especially when given a longer rest in the refrigerator.

Rose syrup adds both a delicate floral note and a gorgeous swirled color that makes the cheesecake feel festive and visually inviting. Additionally, it softens the yogurt’s tang and brings a gentle sweetness that feels festive without being overpowering. A small pinch of cardamom adds warmth and depth, complementing the floral notes and rounding out the flavor beautifully.

Instead of Biscoff, I used pistachio almond cookies, which bring nuttiness, richness, and an Indian-inspired twist. After sitting in the yogurt overnight, the cookies absorb moisture and turn perfectly soft while still holding their shape. They are not mushy, just tender, creating that classic cheesecake-style bite with layers that feel distinct yet cohesive.

Together, these ingredients create a balance of flavors and textures that feel both familiar and refreshingly modern, turning a quick, no-bake treat into a dessert you’ll want to savor.

How to Serve and Customize

This Rose, Cardamom & Pistachio Greek Yogurt Cheesecake can be enjoyed after 4 to 6 hours of chilling, but if you can wait, an overnight rest makes it even better. The flavors feel more integrated, the texture more dessert-like, and the overall experience more cheesecake-adjacent. Garnish with chopped pistachios and dried rose petals just before serving for a festive finish that looks as good as it tastes.

For variations, try a masala chai-inspired version by stirring a small amount of masala chai concentrate into the yogurt along with sweetener of choice and swapping the cookies for Parle-G. You can also explore with Masala Doodh flavors, or add chopped dried fruits for extra texture. The base stays the same, simple Greek yogurt, resulting in a no-bake cheesecake and endlessly adaptable.

Why You’ll Love It

This Rose, Cardamom & Pistachio Greek Yogurt Cheesecake manages to be decadent and light at the same time. Each bite is creamy, aromatic, softly sweet, and deeply satisfying, with contrast from the cookies, crunch from the pistachios and fragrance from rose petals.

It feels festive and indulgent, yet easy enough to make on a whim. Most importantly, it delivers that unmistakable cheesecake satisfaction without the heaviness, the baking, or the fuss. It is the kind of recipe that sneaks up on you, one spoonful after another, until you suddenly realize the bowl is empty.

Recipe FAQ’s and Notes

Yogurt choice

Nonfat Greek yogurt is used for thick creaminess and higher protein, keeping the dessert light yet indulgent.

You can use any other thick yogurt like Icelandic skyrr or higher fat Greek yogurt as per your preference.

Vegan yogurt should also work as well.

Use store-bought vanilla Greek yogurt or add a little honey or sugar to plain Greek yogurt for a sweeter base.

Indian and Pakistani branded rose syrups are available in the Indian grocery stores worldwide.

You can also buy it online on Amazon

What's a good substitute for pistachio almond cookies?

You can find Indian-brand pistachio almond cookies in Indian grocery stores or online

You can substitute with other cookies like Biscoff, digestive biscuits, or Parle-G cookies — just note that flavor and texture will vary slightly.

Wanna make more servings?

Simply multiply the ingredients and layer in a larger dish or in individual cups for easy servings.

Recipe Variations

Mango Cheesecake: Substitute rose syrup with 1/4 cup canned Alphonso mango purée and follow the rest of the recipe as is to make Mango Cardamom & Pistachio Greek Yogurt Cheesecake.

It is available year-round at Indian grocery stores. I recommend the Desai Bandhu brand.

You can also find other brands like DeepRatna, etc. on Amazon that I have used and liked.

If you can’t find Alphonso mango pulp, Kesar mango pulp is a great substitute.

Golden twist: Add Doodh Masala to the yogurt and follow the rest of the recipe as is to make a golden-hued, aromatic Saffron Cardamom & Pistachio Greek Yogurt Cheesecake.

Masala chai version: Stir in a small amount of masala chai concentrate instead of rose syrup and use Parle-G cookies instead of pistachio almond cookies.
