The story of this curry began when I was a 20-year-old preparing to leave my hometown of Pune, India, for grad school in New Jersey.It was the first non vegetarian dish I learned to cook from one of my aunts, since my mom cooks only vegetarian food. Over the years, it’s become my signature chicken curry. While the foundation remains a classic onion-tomato curry spiced with garam masala, I’ve made a few tweaks to fit my evolving cooking style.

While the chicken marinates over the counter, I prepare the curry base: a richly flavored tomato-onion masala. Once the marinated chicken is tossed in, the magic unfolds as it simmers gently, absorbing the spices and flavors.

Depending on my mood and schedule, I’ll choose between two cooking methods:

Stovetop: Cooking the curry in my Dutch oven is my favorite method when I have time to savor the process. There’s something soulful about a pot of curry simmering on the stove. You get to see the oil separate and float on top while inhaling the tantalizing aroma of spices.

Instant Pot: On busier days, the Instant Pot comes to rescue. It delivers the same delicious results in less time, without having to babysit. In less than an hour, you can have a piping hot bowl of curry ready to serve. Perfect for a quick weeknight dinner!

Description

Juicy chicken curry with a spiced yogurt marinade, a rich tomato-onion masala & versatile cooking options. Perfect weeknight meal!


Ingredients

For the Marinade

  • 1/4 cup plain, unsweetened Greek yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric
  • 1/2 tsp regular Indian red chili powder, or to taste
  • 1 tsp garam masala
  • salt, to taste
  • 1 lb (454 g) boneless, skinless chicken thighs, cut into about 1 1/2-inch cubes (see Variations)

For the curry:

  • 2 tbsp neutral oil of choice
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp asafetida
  • 1 medium onion, finely chopped
  • Salt, as needed
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 2 medium tomatoes, puréed or finely chopped
  • 1/4 cup water, optional, if needed
  • 8 to 10 sprigs fresh cilantro, leaves roughly chopped, for garnishing

Instructions

Marinating the Chicken

  • Combine all the ingredients for the marinade in a medium bowl and toss well to ensure the chicken pieces are well and evenly coated.
  • Cover with a lid or plastic wrap and let is sit on the counter for 30 minutes or so while you prepare the curry (see FAQs & Notes for more information).

Making the Curry

Stovetop Method

  • In a medium pot or a deep sauté pan, heat oil over medium heat and add the oil. When the oil starts shimmering add in the cumin and mustard seeds along with asafetida.
  • When the seeds sizzle and the asafetida froths, add the onion. Season the onion with salt to help it soften. Sauté for 4-5 minutes, stirring it frequently, until it is translucent.
  • Stir in the ginger-garlic paste and sauté for 1 minute.
  • Stir in the turmeric and garam masala. Sauté the mixture for about 30 seconds to let the spices bloom.
  • Add the puréed or chopped tomatoes. Season the mixture with additional salt and stir the ingredients to combine them well.
  • Cook uncovered for 5-7 minutes on medium-low heat till most of the moisture is absorbed and you can see tiny drops of oil floating on the surface.
  • Toss in the marinated chicken and mix well to combine.
  • Simmer covered for 10-12 minutes, till the chicken is fully cooked.
  • Continue simmering uncovered for additional 8-10 minutes to let the excess moisture absorb and evaporate, while stirring occasionally.
  • Garnish with cilantro. Serve immediately (see FAQs & Notes for storing leftovers or meal prepping information).

Instant Pot Method

  • Place the inner pot in the Instant Pot and press the Sauté button.
  • Add the oil along with cumin and mustard seeds along with asafetida.
  • When the seeds splutter, add the onions. Sprinkle some salt and sauté till the onion turns light brown in color, for about 5-7 minutes.
  • Stir in the ginger- garlic paste and sauté the mixture for 1 minute.
  • Add the turmeric and garam masala and sauté the mixture for 30 seconds to let the spices bloom.
  • Mix in the tomatoes and stir to combine the ingredients. Deglaze the bottom of the pot by scraping it with a wooden spoon. This is an important step; if the bottom of the pot is not deglazed well, the “burn” error might appear during the pressure-cooking stage.
  • Cook the mixture for 5 minutes, until the tomatoes lose most of their moisture.
  • Press the Cancel button to turn off the Instant Pot.
  • Add the marinated chicken along with 1/4 cup of water.
  • Toss the chicken with the onion-tomato mixture and stir to combine the ingredients.
  • Close the lid and turn the steam release valve to the sealing position. Press the  PoultryManual/ Pressure Cook button and set the time for 10 minutes on high pressure.
  • When cooking is complete, open the lid after the pressure has released naturally. It will take about 15 -20 minutes to depressurize.
  • Optional To Cook Out Excess Liquid: Using a slotted spoon, transfer the cooked chicken to a clean medium bowl. Press the Sauté button and bring the sauce to a boil. Stir the curry continuously for 5 to 7 minutes, until most of the moisture is evaporated and the oil has separated from the sauce. Transfer the chicken back to the reduced curry and toss to combine it well with the curry. Press the Cancel button to turn off the Instant Pot.
  • Garnish with cilantro/coriander and serve hot with rotis or rice.

Recipe FAQ’s and Notes

Tips for Success

Marinate the Chicken: Give the yogurt and spices at least 30 minutes to work their magic. An hour on the counter or overnight in the refrigerator is even better if you have the time. This step keeps the chicken moist and infuses it with flavor.

Choose Thigh Meat: Whether boneless or bone-in, chicken thighs are ideal for this recipe. They stay juicy and tender and, if you use bone-in pieces, they lend an extra depth of flavor to the curry. Plus, eating chicken right off the bone is an experience in itself!

Leftovers or Meal Prep

This curry keeps well for up to three days in the refrigerator and freezes beautifully for up to three months. Make a double batch and enjoy it later—because good food should never go to waste!

Recipe Variations

You can replace boneless chicken with bone-in, skinless chicken thighs and drumsticks. Bone-in chicken will take longer to cook on the stove or if using the Instant Pot, be sure to increase the cooking time to 15 minutes.

You can use your choice of protein like boneless lamb, pork, beef or even a firm white fish like cod, tilapia. Remember to adjust the cooking times for both the stovetop and the Instant pot recipes for fish. Other meats can use the same cooking times.

Make it vegetarian by substituting chicken with cauliflower, baby potatoes or a mixed vegetables including peas and carrots.
