For years, I’ve loved experimenting with Thandai flavors in different forms. From my Thandai Panna Cotta and Thandai Cheesecake to Thandai Sugar Donuts, I’ve found that the combination of these fragrant Thandai spices works beautifully beyond just the traditional drink. One of my cousin’s even put a spin on my Masala Doodh Tres Leches Cake and turned it into Thandai Tres Leches Cake using my recipes for the cake and the masala.
These cookies follow that same concept—taking the signature flavors of Thandai and incorporating them into a different form. Instead of using pre-made Thandai masala, I’ve deconstructed the spices and folded them individually into a base almond cookie dough.

Pinch saffron, crushed between your fingers, optional
Whole or sliced almonds, for topping

Instructions
Preheat oven to 350°F (175 °C) (see FAQs & Notes for Convection oven).
Line a baking sheet with parchment and set aside. In a large bowl, mix together eggs, sugar, and rose water. Add the almond flour followed by salt, and mix together with a spoon or spatula. Form into 1 tbsp dough mounds, roll into balls, and place on a baking sheet, 1-2″ apart. Top with a whole or a few sliced almonds by pressing them n the center if the cookie. Bake for 15-17 minutes or until the tops are dry to the touch, and edges/bottom golden brown.
Take them out of the oven and let cool on baking sheet for about 10 minutes (see FAQs & Notes for storage information).
Transfer them on to a serving platter.
Dust with powdered sugar and sprinkle dried rose petals.
Coarsely grind ½ tsp in your coffee grinder or a small mortar and pestle and use them in the recipe.
Using a convection oven?
Convection ovens cook faster and more evenly due to the circulating hot air. Since this recipe was originally created for conventional oven, please reduce the temperature by 25°F (15°C) to bake them in your convection oven.
How to store them for maximum freshness?
Store in an airtight container at room temperature for up to 5 days or in the freezer for up to 6 months.
Recipe Variations
Make it eggless! Substitute 1 egg with ¼ cup of aqua faba or applesauce or a mixture of 1 tbsp ground flaxseeds + 3 tbsp water.
