Description

Quick, easy, and savory mushrooms with peas, crafted using a French technique with Indian flavors.


Ingredients

  • 8 oz (227 g) white button mushrooms, about 12-15, finely minced (see FAQS & Notes + Variations)
  • 1/2 cup green peas (fresh or frozen)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • A pinch of asafetida
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2-inch piece of ginger, peeled and minced
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp garam masala
  • Salt, to taste
  • 45 sprigs cilantro/coriander leaves, chopped, for garnish

Instructions

  • Heat oil in a pan over medium heat and add cumin seeds and a pinch of asafetida.
  • Add the onions and sprinkle some salt on them.
  • Sauté until soft, for about 2-3 minutes, then stir in garlic and the ginger. Cook for about a minute.
  • Add turmeric, red chili powder, and garam masala. Let the spices bloom for 30 seconds.
  • Stir in the minced mushrooms and season with salt. Add 1/4 cup water to help mushrooms cook and absorb spices.
  • Mix in the peas and cook uncovered for 5 minutes, until mushrooms and peas are cooked and moisture is completely absorbed.
  • Garnish with cilantro/coriander leaves and serve warm with rotis, sourdough bread, or cool to room temperature and use as a stuffing for parathas or puff pastry/phyllo appetizers. (see FAQs & Notes +  Variations).

Cleaning mushrooms

Instead of washing mushrooms under running water, gently wipe them with a damp paper towel to remove any dirt. Mushrooms act like little sponges and can absorb water easily, which can affect their texture while cooking.

Mushroom options

While white button mushrooms work beautifully here, cremini (baby bella), portobello, oyster, or shiitake mushrooms can also be used. Finely mince them as directed for the same hearty texture.

Storage/Make Ahead Tips

Store in an airtight container in the refrigerator for up to 5 days. The mushroom mixture also freezes well; thaw in the refrigerator and reheat gently before serving.

Don’t like mushrooms? Minced (not riced) cauliflower can replace mushrooms for a different texture.
