An Indian-ish Take

These Spiced Paneer Stuffed Round Zucchinis are my Indian-ish take on the classic stuffed vegetable. Round zucchinis, with their naturally adorable shape, get hollowed out and filled with a mildly spiced mixture of crumbled paneer and greens, then baked until golden and tender.

I love to serve them over a bed of Jeera Rice with Peas & Dill, and drizzle the pan juices on top for a little extra flavor.

It’s a dish that looks elegant, feels light, and still delivers all the cozy satisfaction of a stuffed-and-baked entrée.

Farmers Market Magic

Every now and then, a farmers market find sparks a little kitchen magic and that’s exactly what happened. This recipe for Spiced Paneer Stuffed Round Zucchinis started with that farmers market impulse buy. Adorable, baseball-sized zucchinis in deep green, pale green, and golden yellow colors were too tempting. I wasn’t even looking for them, but the moment I spotted them, I knew I had to bring them home. They were just too cute to pass up, even when I didn’t know what to make with them!

I grilled a few slices for my Garam Masala Grilled Veggies Salad, then went online for more inspirations. Most of what I found leaned Mediterranean—ground meat, rice, or tomato-based veggie fillings—but I wanted to try something different.

So I gave it an Indian twist. I stuffed them with a gently spiced paneer and greens mixture that baked beautifully inside those tender zucchini shells. Served over Jeera Rice with Peas & Dill, it made for one of the most delicious summer meals I’ve cooked in a while!

Layers of Flavor

Round zucchinis are just right for stuffing, and they hold up well in the oven without falling apart. I love how their mellow, almost sweet flavor acts as the perfect canvas for bold Indian spices. Round zucchinis are usually a summer find—often showing up at farmers markets or specialty produce stands. If you can’t find them, you can easily swap in regular zucchinis and turn this into a stuffed zucchini boat instead. Just slice them lengthwise, scoop out the center, and follow the same filling and baking process.

The filling brings everything into balance. Crumbled paneer adds richness and body, while baby greens like kale, chard, and spinach, bring freshness and a subtle bite. I even added some of the scooped-out zucchini flesh back in to keep the stuffing naturally moist, without adding too much fat or liquids. It all gets pulsed in the food processor and then gets seasoned with cumin seeds, turmeric, garam masala, and a touch of chili powder, just enough to give it warmth without taking over.

Together, all the ingredients turn into a delicious dish that’s equally nourishing as it is flavorful. Thanks to the paneer and greens, each serving is high in protein, high in fiber, and naturally low in carbs.

Ingredients

Units Scale
  • 3 medium round zucchinis, use mixed colors if possible: dark green, yellow, pale green (see FAQs & Notes + Variations)
  • salt, to taste
  • fresh cracked black pepper, to taste
  • Cooking spray or neutral cooking oil for baking
  • Jeera Rice with Peas & Dill (for serving)

Special Equipment

For the Stuffing

  • 5 oz paneer (about half a block), cut into cubes (see Variations)
  • 1 handful power greens (baby kale, baby chard, baby spinach) (see Variations)
  • salt, to taste
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/4 tsp red chili powder (for mild heat)
  • 2 tbsp neutral cooking oil (plus extra for brushing)

Instructions

  • Preheat oven to 400°F (200°C).

Prep the Zucchinis 

  • Cut the tops off the round zucchinis (save them, don’t discard!) and carefully core them using a melon baller or spoon.
  • Reserve half the scooped-out flesh for another use (tip: add it to dal or a sabji for extra flavor and nutrition).
  • Drizzle some oil over the hollowed zucchinis and season insides with salt and pepper.

Prep the Stuffing

  • In a food processor, combine half of the reserved zucchini flesh, power greens, and paneer cubes. Pulse until crumbly and combined but not pureed.
  • Transfer to a bowl. Add salt, cumin seeds, turmeric, garam masala, and red chili powder.
  • Drizzle in the oil and give it a good mix to combine everything well.
  • Stuff each of the prepared zucchinis generously with the paneer and greens mixture.
  • Carefully place the zucchini tops over the stuffing.
  • Place the stuffed zucchinis in a greased baking dish.
  • Lightly spray or brush the tops with cooking oil.

Baking & Serving the Stuffed Zucchinis

  • Bake for 25-30 minutes or until zucchinis are tender and filling is golden on top.
  • While baking, prepare Jeera Rice with Peas & Dill, for serving.
  • Serve the stuffed zucchinis hot over a bed of the prepared rice.
  • Drizzle the pan juices released during baking over the top for extra flavor.

Recipe FAQ’s and Notes

Zucchini flesh tip

You’ll only need half the scooped-out zucchini flesh for the filling. Save the rest to stir into dal, add to a quick sabji, or blend into a soup or chutney base.

Seasonal tip

Round zucchinis are typically available only during summer at farmers markets or specialty stores. For a year-round option, you can make zucchini boats using regular zucchini—just slice lengthwise, scoop out the center, and fill and bake the same way.

Spice it up

Add more red chili powder or minced green chili if you prefer a spicier kick.

Best served fresh

While the stuffed zucchinis can be reheated, they’re at their best right out of the oven when the textures and flavors are just right.

Recipe Variations

No power greens? Feel free to use just spinach or even finely chopped regular kale or chard—whatever you have on hand.

Want it meaty? Ground chicken, turkey, or lamb can be swapped in for a non-vegetarian twist—just cook the meat before stuffing.

Make it vegan: Crumbled tofu is a great substitute for paneer. Just press out any excess water before pulsing and adjust seasoning to taste.

Other filling ideas: Mashed potato or riced cauliflower also work well as plant-based alternatives—just make sure the filling holds together and isn’t too wet before stuffing.

Switch the base: Instead of basmati rice, serve with quinoa, millet, or cauliflower rice to keep it grain-free.
