A New Take on A Classic

When it comes to reinventing traditional Indian recipes, oven roasting has become my go-to technique. This Indian-style Spiced Roasted Cabbage swaps the traditional stir-fry for the oven, and the results are nothing short of magical. Think of it as the Maharashtrian Kobichi Bhaji or Indian Gobhi Ki Sabji, but with a bit of a glow-up. It’s amazing alongside rotis for a cozy meal or enjoyed solo as a warm, savory cabbage salad with bold, spiced undertones.

Indian-style Spiced Roasted Cabbage

Roasting brings out the natural sweetness of the cabbage, giving it a beautifully caramelized exterior and a tender yet slightly crisp bite. You also get that subtle smokiness from the dry heat, which elevates the dish to a whole new level. By roasting it with just a touch of oil and spices, you’re keeping the dish light while maximizing flavor and health benefits of the cabbage.

Why I Love Roasting

If you’ve followed my blog, you know I’m all about giving everyday Indian stir-fries a roasted makeover. After experimenting with the classics, I couldn’t resist trying it with green cabbage.

It’s a unique choice but one of my absolute go-to vegetables. Roasting cabbage with Indian spices truly transforms it into something special!

From okra to cauliflower to potatoes, oven-roasting has been my secret weapon for bringing out the best in these humble vegetables. Roasting creates deeper, richer flavors while making cooking simpler. No standing over the stove, no constant stirring—just toss, roast, and enjoy. And with minimal cleanup (thanks to aluminum foil or parchment), it’s as practical as it is delicious.

A Year-round, Versatile Vegetable

Cabbage is one of those vegetables that you’ll find year-round, no matter where you are in the world. Its adaptability and affordability make it a kitchen staple and one of the most accessible vegetables to cook with.

Its mild flavor and natural crunch allow it to work beautifully in a variety of cuisines. Additionally, its subtle, slightly sweet flavor makes it perfect for absorbing bold spices.

What I love most about this dish is how easily it adapts to your mood or pantry. Want to make it a little more filling? Toss in some fresh English peas for sweetness or stir in cooked chickpeas—regular or black—for a protein upgrade. It’s the kind of recipe that can stand alone as a light warm salad or works equally well as a vegetable side that pairs effortlessly with dal, rice, pickle or koshimbir.

Whether you’re prepping a quick weeknight dinner or putting together a flavorful veggie spread, this dish has you covered.

Packed with Nutritional Goodness

Cabbage isn’t just delicious—it’s incredibly nutritious, too. Low in calories and high in fiber, it’s great for digestion. It’s also loaded with vitamins C and K, antioxidants, and other nutrients that support overall health. Including more cabbage in your meals is an easy way to add both flavor and nutrition to your diet.

Indian-style Spiced Roasted Cabbage

The spices in this dish bring their own set of benefits too. Turmeric is known for its anti-inflammatory and antioxidant properties. The blend of spices in the garam masala support digestion and boosts immunity. Red chili powder is a great source of capsaicin, which can aid metabolism.

Together, these ingredients not only create a dish bursting with flavor but also one that’s packed with health benefits, making it a wholesome addition to your table.

Why you’ll love this recipe

Making this couldn’t be easier. A touch of turmeric for its golden hue and earthy flavor, a sprinkle of red chili powder for a gentle heat, and a pinch of garam masala for its signature warmth. Just toss the cabbage with spices and oil, spread it on a baking sheet, and let the oven work its magic.

In under 30 minutes, the cabbage roasts evenly, soaking in the spices while developing a gorgeous golden-brown color that’s almost too tempting to resist.

Indian-style Spiced Roasted Cabbage

It’s a bold, flavorful dish that’s wonderfully simple and super satisfying. If you’re looking for a fresh take on a classic, this Indian-style Spiced Roasted Cabbage is the way to go—familiar yet exciting in all the best ways!

This was delicious! I doubled the recipe, added 1/2 a red onion, and found it helpful to toss these with the oil and spices in a big bowl before roasting everything on two sheet pans. I served this as a side with a veggie korma curry, and they worked well together. Roasted cabbage was so easy — we’ll do it again soon!
