The Inspiration for This Soup
This recipe was born out of my love for black-eyed peas and kale. While I often make a salad for lunch or the Maharashtrian Chawlichi Usal with the duo, I also switch it up and make the North Indian style black-eyed peas curry popularly known as Lobia Masala. It’s a dish that’s made with black-eyed peas cooked in the classic Indian onion-tomato masala sauce. It’s an incredibly comforting and nutritious beans & greens stew that makes a regular appearance on our dinner table.
Recently, I decided to experiment with the curry recipe. I had a can of coconut milk in my pantry and thought, “Why not turn this into a soup?!” Without a second thought, I dumped the whole can of coconut milk in my Le Creuset pot! I served it with some warmed chili coriander naan I found in the freezer, and to my delight, it became one of the most delicious and comforting soups I’ve ever made!

What I love about this Spicy Black-Eyed Peas & Kale Soup is the harmonious blend of flavors and textures. 8 to 10 sprigs fresh cilantro, leaves roughly chopped, for garnishing
2–3 medium green onion, thinly sliced, for garnishing
Instructions
Start by crushing the ginger, garlic and Serrano chili pepper in a small mortar and pestle. You can also use a spice grinder or simply finely chop the three ingredients.
In a medium pot or a deep sauté pan, heat oil over medium heat and add the oil.
When the oil starts shimmering add in the cumin seeds, mustard seeds, turmeric and asafetida.
When the seeds sizzle and the turmeric and asafetida froths, add the onion. Season the onion with salt to help it soften.
Sauté for 4-5 minutes, stirring it frequently, until it turns light brown.
Stir in the crushed ginger-garlic-chili. mixture and sauté the ingredients for 1 minute.
Stir in the garam masala and sauté the mixture for about 30 seconds to let it bloom.
Add the chopped tomatoes. Season the mixture with additional salt and stir the ingredients to combine them well. Cover and cook the mixture for 5-7 minutes on medium-low heat till the moisture is absorbed.
Add the drained and rinsed canned black-eyed peas, followed by the can of coconut milk.
Fill the can after emptying the coconut milk with water and add it to the pot with the rest of the ingredients.
Stir to combine everything well.
Stir in the chopped kale.
Mix well and bring it to a gentle boil, about 5-7 minutes, uncovered over medium heat.
Take the pot off the heat and ladle the soup into bowls. Garnish with chopped cilantro and sliced green onions and serve warm along with warmed naan. (See FAQs & Notes for storage instructions)

What kind of kale to use?
In my recipe, I used the Tuscan kale variety, also known as Lacinato or Dinosaur kale but have also made this soup with the more commonly available curly kale or baby kale. Purple kale would also work and add a nice deep color in the soup.
Got leftovers or making ahead for meal prep?
The soup is easy to make ahead and reheats beautifully, making it perfect for meal prepping!
If you have leftovers, you can store them in the refrigerator for up to 3 days in an air tight container and reheat either on the stove top or in the microwave oven.
The soup is also freezer friendly! You can store it in freezer safe airtight containers for up to 3 months. Thaw in the refrigerator overnight and then reheat on stove top or microwave oven.
Recipe Variations
Try other types of beans like cannellini, navy or northern beans that have a similar color and flavor. You can also use chickpeas, red kidney beans or black beans for a change in flavor and color.
