A childhood classic

There’s mac & cheese—and then there’s my Dad’s Stovetop Mac & Cheese with Veggies, a dish that’s been a beloved part of my childhood and one of my earliest food memories. It’s not the ultra-creamy, sauce-heavy kind you might expect.

This one is Indian-style–lighter, simpler, and packed with sautéed vegetables, scrambled egg, and a generous sprinkle of cheese—just the way my dad has been making it for years! It certainly has a charm of its own, and for me, it tastes like home. It’s unfussy, comforting, and full of flavor, with a backstory that makes it even more special.

My Dad’s Signature Concoction

In our home, my mom has always played the role of the “Head Chef”—the go-to for everyday meals and elaborate feasts alike. But every now and then, my dad steps into the kitchen. I remember, he would cook a lot more growing up, especially when we were little. His specialties? Made-to-order eggs on Sunday mornings and this Stovetop Mac & Cheese with Veggies for dinner on weeknights. For my siblings and I, it’s one of our favorite meals—and his too.

This dish actually goes back a generation further. My dad learned how to make it from his maternal grandfather, who used to cook it for him during his childhood. It’s a simple recipe, but one that carries layers of memories.

What makes this version unique is its simplicity and flexibility. My dad would toss in whatever veggies were on hand—usually onions, green peppers, and cauliflower—plus scrambled egg, bread croutons, and a generous sprinkle of grated Amul cheese.

Over the years, I’ve only made the tiniest tweaks. I sometimes use jalapeños instead of green peppers for a mild kick and add broccoli when I have it on hand—something we didn’t grow up with in India, but now love including. If Amul cheese isn’t around, a mix of Monterey Jack and cheddar works beautifully. But the heart of the recipe remains the same.

Serving, Variations & Customizations

The beauty of this dish is how adaptable it is. You can use any combination of seasonal vegetables or whatever’s in your fridge. Want to bulk it up even more? Add tofu or shredded rotisserie chicken. If you’re serving kids and want to avoid spice, skip the jalapeños entirely.

And while the ketchup-on-top may seem unconventional, don’t knock it till you try it—it’s nostalgic magic for those of us who grew up with it!

Stovetop Mac & Cheese with Veggies

A lighter and wholesome veggie-packed mac & cheese with egg, made on the stovetop. Perfect for cozy weeknight dinners.


Ingredients

Scale
  • 2 cups elbow pasta
  • 2 tbsp butter or cooking oil of choice
  • 1 small onion, chopped
  • 1 medium jalapeño, diced, seeded removed for milder heat (see FAQs & Notes)
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • salt, to taste
  • fine ground black pepper, to taste
  • 1 large egg (see FAQs & Notes)
  • 1/2 cup croutons or a slice of bread, lightly toasted and cut into chunks (see FAQs & Notes)
  • 1/2 cup shredded cheddar cheese (Amul Cheese recommended)
  • Tomato ketchup, optional for serving (see FAQs & Notes)

Instructions

  • Cook the elbow pasta per the directions on the package and while it cooks, melt butter in a deep sauté pan over medium heat.
  • Add the onions and jalapeños and sauté for 1-2 minutes till they turn soft.
  • Stir in the cauliflower and broccoli florets and continue sautéing for another 2-3 minutes till the veggies change color and soften up a bit.
  • Season with salt and pepper and give it a quick stir.
  • Push the sautéed veggies to the side of the pan and crack in the egg in the center.
  • Scramble it with the help of the cooking spoon.
  • Combine the scrambled egg with the veggies.
  • Drain the pasta and add it to the pan.
  • Stir the pasta with the veggies and scrambled egg. Sprinkle the croutons and shredded cheese on top.
  • Serve immediately with more croutons and shredded cheese on the side.

Step: 1

Combine the scrambled egg with the veggies.

Drain the pasta and add it to the pan.

Stir the pasta with the veggies and scrambled egg. Sprinkle the croutons and shredded cheese on top.

Serve immediately with more croutons and shredded cheese on the side.

Recipe FAQ’s and Notes

Spice level

For a mild kick, substitute green peppers for jalapeños. Skip them entirely if cooking for kids or spice-sensitive eaters.

Vegetables

Use any combination of veggies you have on hand—onions, cauliflower, bell peppers, broccoli, carrots, or peas all work beautifully.

Egg?
